Charcoal and wood mix is always the best flavor IMO. There's something about the charcoal that brings an extra kick to the BBQ flavor. I always mix the two with my offset and never go pure wood.

My daughter and I rolled into a small local BBQ comp with a COS smoker. The looks we got were not good. But the looks we got when we took 1st in ribs and 2nd overall were priceless! A memory she and I still talk about years later. You are 100% on point about equipment is nice, but its all about the Pit Master!

@@Halfwaked I used a modified version of the 3-2-1 method. The wrapped part was based on what was needed for the meat and the final part was just to set the sauce, maybe 30 min. Recipe is my own. Turbinado sugar, salt, pepper, granulated onion, granulated garlic, chili powder and ground oregano for the rub. Wrapped was butter, brown sugar, agave syrup, tiger sauce. Final glaze was drippings from the wrapped step, sweet baby rays and apple cider vinegar.

@@freemanchrisx Hahaha, true. I've made some epic ribs and other good stuff on the same level BBQ setup. I think the brand was Char-Griller from Lowes. It worked just fine for many many years before it rusted away.

I bought an Acorn at Lowes that was a floor model. They initially told me no, but then found me in the store later and offered it to me. Done deal. Loved this video. Shocked with the smoke ring I. The brisket.

For those who have that smoker how does it look now is it super rusty ? I have a offset smoker char-grilled (cheap) and with the 4 time smoking the paint on the offset is peeling off

Because that's what people are sold on. Buy this bike you'll be Lance Armstrong. Buy these golf clubs you'll be Tiger Woods. I watching a bbq competition yrs ago. The guy that won did it with a smoker he made from a trash can. Some of those guys that trailered in their smoker were not happy.

Amazing!!! I'm 62 and I have been smoking and barbecuing meets all of my life. My father was a pitmaster and I learned everything from him. I literally went out and bought the exact same barbecue pit from home Depot. After driving semi trucks for 30 years I retired and now I've returned to my passion of cooking and catering. But it's just like you said, I had to use every bit of my skills and experience to manage that damn offset smoker box to keep the smoke clean and the temperature steady. My first brisket cooked on it came out just like yours, but I mean I had to watch it like a hawk like every 35 to 45 minutes. Hey my friend, mine came with the tray with the handles attached on both ends so you could raise it or lower it two different settings for just straight grilling. I appreciate your video because I actually felt guilty for buying such a cheap grill 🫵😂👌 I subscribed and hope to see more...God Bless and much success. Amen!

Jeremy the paint will come off of the se smokers but only in spots. Take a wire brush. Clears the paint where it bubbled. It will be bare metal. Hit it with canola oil and it will season just like your 500 gallon smoker's firebox. Also, you should have use a drip pan.

As a gun loving dude wrapping up his very first butt off a $250 joint....ha. I did chicken and a loin too and they were great. Thinking the butt will be awesome. Lil extra vigilant on keeping my temp solid but the work seems to have paid off and I learned a lot from day 1 and all the cooking shows over the years haha.

Yeah but smokers like this dont last and have tons of things that make life even harder for newbs. They ruin a brisket and think its their fault and not the fact that theres no cooling plate stopping fire from going from the pit to the chamber. Thats a cheap design flaw that will ruin a brisket. Cheap smokers like this are no ones friend.

I started out on an inexpensive ($150) Home Depot smoker 12 years ago. That smoker was a pain to maintain temp, it was constant babysitting. That being said I almost always got great results in the end. The hardest part was avoiding huge temp swings. Although I feel like learning on something like that where it’s such a challenge made me better for when I upgraded to a better quality smoker.

I love the end of this video. For father's day, my wife bought me a cheap 16 inch Char-Broil bullet smoker. I've never had one and have been wanting a nicer pellet smoker. However, just not in the budget for now. So far, I've been pretty damn happy with it. Still learning, but that's how we get better, right?

I think it's definitely the skills you bring to the tools... Granted some tools are nice, but it's the experience, knowledge and understanding of what is required to produce a wicked brisket. The only thing to note, is this smoker will probably only last 3 or 4 more cooks without maintenance. Also not to mention the amount of time spent managing that fire.

I just bought that exact offset a few weeks ago and after watching a ton of your videos for the first time successfully smoked ribs. I had tried before low and slow on a charcoal grill, but never knew to get them to pull away from the bone to kick up the heat towards the end. This smoker def does require a lot more attention to the fire box and more fire management, but when you enjoy it itndoesnt matter :) thanks for all of thebvery informative videos you've helped me raise my cooking level alot! My wife actually said she never liked brisket...one day I will follow your guides and see if I can change her mind

I have a "cheap" king griller by char griller. I added felt gaskets to cut down on the smoke loss and lowered the internal chimney. It smokes meat better than most other grills just out of the box. Cheap isnt always bad. If done properly.

You do not have to spend alot of money on a smoker to have great tasting BBQ you just need to know how to control the temperature cut trim the meat and seasonings and wood

I just got what sounds like the same model, looked it up and they called it the "Smokin' Ace". Interested in modding it too after using it twice. First time was just smoking tomatoes and peppers for salsa. Out of the gate, couldn't help but notice the lower grate, steel insert can be flipped upside down and propped up, to what makes a pretty efficient reverse smoking device! Keeps the raw fire from going right into the cook chamber, at the very least. I'm thinking of adding a secobd chimney on the RH side just for this purpose, and just close the other one off when doing this. Your thoughts? Anyone else tried this? How much lower did you drop your original chimney to, interested in trying that and felt stripping too.

Thank you. I just made my 1st Brisket yesterday. I Just bought a Oklahoma Joe offset about 7 months ago. I'm still a novice. However following your advice, I made the best Brisket I've ever eaten yesterday. Multiple compliments from those who partook of it on Thanksgiving. While I didn't give mine a 10 of 10, it was the best I've had so far to date.

I have a Royal Gourmet offset smoker and I made some modifications to it. Smoked my first rack of baby back ribs. I have to say for not knowing a lot about how to cook bbq. They came out very good. This video gives my confidence to cook a brisket on my offset smoker. Great video and thank you for posting it.

Opinion: one of my favorite parts of BBQ is the fire management, hovering over the meat, drinking beer, and chatting with friends while we enjoy the smoke and "idea" of BBQing :) This is probably why I have only ever used cheap Char-Broil offsets :)

Same here. I use a cheap River Grille offset. Like you said fire management is the best part even when being by yourself, enjoying an adult beverage and brainstorming and or just relaxing! To me it's theraputic!!!

I will tell you first hand, I bought a cheaper packer (still Choice, but cheap) from Costco and put it in a $400 cabinet pellet smoker, following instructions he's provided in other videos and modified slightly for my own smoker type. I'd cooked on indirect heat before, but never an actual smoker, and I turned out a pretty damned good brisket. So yeah, even with cheaper equipment, if you can follow the experts and their instructional videos, you can still turn out some good quality as an amateur.

That $199 chargriller you showed very briefly, I used one of those probably twice a week for almost 6 years. Always stored uncovered and cleaned out once a year. I loved that thing. It made bbq so good my family quit buying bbq eating out.

My mom has had one since I was a little kid and it always impressed me and last week for my 20th birthday she gave me my own! It's such a great grill for the price. Especially with the cast iron grates.

@@aidanmakinster922 it really is a great piece. I had to replace the wheels with a pair from harbor freight, but I moved it a lot. I took it camping and to friends houses for parties and stuff. I bet if it didn’t travel so often the wheels would last years on end.

I actually love a cheap ass grill, I throw them away every 3 years and the cost per use is like 1 dollar. I bought a mini charcoal grill at Walmart for $14 and I’ve used it probably 50 times camping, you don’t have to be rich to grill great meat.

I bought one of these over the summer, and made a charcoal basket and put a thermometer on it and it doesn't work to bad. I cooked a brisket for Thanksgiving today. And it turned out excellent.

Hey Mad Scientist! I just wanted to let you know that I followed your recommendations on smoking a turkey and the results were amazing. I had very good BBQ skills before I started watching youtube...but you seemed to have the right blend of presentation and quality information that rang true to my experience. I followed your suggestions, to the letter, for smoking a turkey yesterday for Thanksgiving and my followers are still raving about the smoke, flavor, coloring and have pronounced my BBQ legacy intact and secure!!! Had a similar offset form HD for about 3 years. Leaked like a sieve and burned charcoal by the bag for a 4 hour cook. Did a bunch of mods that helped. Finally dumped it for a weber kettle. Much better. Also now have a camp chef sg. Love them both.

I dislike you so much watching you eat that brisket lol. Looks great, made me hungry, and gave me hope that I could do this too, I bought a grill because of your inspirational video. I literally can burn a peanut butter and bananas sandwich. I'm now out $139 for the smoker, $12.24 for the meat, and about $46 on 2 cases of beer. $8,237 dollars for automotive repairs on my neighbors car after my tree fell on her car. Roughly $42,000 for damages to my home after smoker caught the garage on fire resulting in part of my roof fall onto my tree that separates my neighbors and my house, the tree caught fire and fell onto the car. I want compensation in the form of allowing me to stay with you (just a few months) as well as cooking for me daily. OH by the way I played the trombone in high school too.

Mine cost 80 and my picky eater mother in law raves about my brisket and turkey that I smoke on it. I'm a disabled Vet that can't afford an expensive smoker, if I can smoke a goat in the middle east then I can use a cheap smoker in the U.S

I didn't even pay that for my kettle. Got it used for $25, it's the upgraded one with the enclosed ash tray and nothing was wrong with it at all. I still see them all over in great used condition for 20-50 bucks.

@@fmfdocbotl4358 how do you set up the coals? I have the same and have been working my way up to a brisket. Do you do a snake around the outer edge, with wood on top every so often or do you split it with charcoal/wood on one side and meat on the other?

@@jco1966 I do the split (the only split i can do). I keep the meat on one side and heat on the other. Its a pain in the ass but it always turns out great. Next year I'm going to upgrade to a 55 gal drum cooker because I'm planning on having some troops from the base over for thanksgiving.

I own an inexpensive off set smoker very similar to the one used in this video. It sits outside year round, has quite a bit of exterior rust, most of the paint is gone and it makes some of the best smoked BBQ I've ever tasted. I never use charcoal. Use Hard wood chunks and get a good fire going and let it burn down to mostly coals. Use the vent on the fire box to control the air/fuel ratio and add wood as needed to maintain smoke and temperature. These smokers are labor intensive and require frequent checking but the labor is worth it in the end if you do it right.

I've known this for years. I've cooked countless perfect briskets on a weber and charbroil offset. hands down best briskets I've ever tasted. Been to every bbq restaurant in Texas. It's not about the smoker it's the BBQ master. That's the key. Passion and Patience.

Exactly, I this this is a testament to how much he understands wood and fire and his ability to manage a fire. Anyone can trim, season, temp and wrap a brisket, it’s the fire that especially in that type of smoker that makes or breaks it.

Thanks for making this video and letting me know I’m not crazy. I have a cheap POS char-broiler smoker ($199 Home Depot). And I have the hardest time managing the fire. It leaks heat everywhere and I’m constantly playing with the fire and adding wood and charcoals every 20-30 minutes, just like you did... but the brisket always tastes amazing. At first I just thought I was doing something wrong, but realized it’s just the cheap smoker. Lately , I’ve just been smoking it 4-6 hours on the smoker, then wrapping it and finishing it in my kitchen oven. Partly because I’m lazy, but mostly because the inconsistent heat and all the fire fiddling takes all the fun out of the cook. After 4-5 hours I’m just over it. This was my first experience with offset smoking and I’m looking forward to upgrading. I’m getting ready to build my own offset, since I’m pretty decent at welding. Thanks for the video. It was really helpful.

I recently moved but my previous nextdoor neighbor had one of these or something similar. We used to hang out in his backyard and he'd cook. Probably didn't mind having to refill the thing so often because it was a bunch of us out there with him and it was the best bbq I've had in a while.

I smoked a pork butt for the first time ever, and while its not up to par with you, I followed some of your steps and it turned out ok. Definitely going to keep doing and trying more.. I don't have an offset smoker but I run a gas BBQ and a charcoal BBQ in my back garden. I've had so many models over the years. The food tastes the same regardless of how much the gear costs but the more expensive stuff just makes life easier. You get to spend a little more time enjoying a beer with friends over having to "manage" the cooking process.

i bought maybe not the cheapest smoker in the world, but close to it (was like half a millimetre more than the crapest one i've seen) a few months ago for my dad. first thing he made took some getting used to, the thing was leaking smoke all over, the paint didn't come off (was saving more on size rather than quality i guess) but it turned out alright. second time was amazing actually. a week ago my brother and i got our hands on a lamb leg and dad allowed us to his smoker, by this point the whole thing was so gunked up with soot and grease that there was no more smoke leaking, we weren't doing the cleanest fire management either, we had temperature spikes, we just used any wood we found in dads shop downstairs, but by the time we wrapped it, my brother tried to pick it up by the bone and it came right out, and by the time we were done, the whole neighbourhood loved what two newbies who were getting progressively drunker as the cooking process went on, were able to cook up. TLDR: it's not a science project, you don't need fancy equipment and you don't need a whole lot of skill, all it takes is: time, discipline and a decent chunk of meat. it won't go fast with a shit smoker, but a good one takes a while too and if you're on a budget, saving on the smoker is fine, saving on the meat is not, even the best smoker won't turn a turd into candy.

A suggestion on avoiding the paint bubbling is doing seasoning burns before you start cooking. Do 3-4 small low temperature burns that last 30-45 mins. This allows the paint to cure and bond with the metal better.

Fuck all that, I bought a can of grill paint from home depot and sprayed the whole can of it on the grill. Did a high temp burn in the day after the paint dried and the rest is history. I've had about 5 smokes on it and the paint I'd barely bubbled

I was wondering if you could try it again with a Select Brisket instead of a choice, as those of us with a COS can't always afford the best meats, but would love to see how a pro would give a cheaper brisket the best chance of coming out good! This was my first smoker. I made a lot of briskets and ribs on that thing and, although fire management was a full time job.. It always made pretty good meat. That said, I don't miss it.

I just picked up an offset smoker from a guy on fb marketplace for $40. Watching this makes me glad I got it used. The burning paint smell is definitely something I don't like. I had no idea how to use a smoker until I watched this. Thanks.

I got the dynaglo offset cabinet,home depot $269. Huge space. Using chips running 100deg.. 4-5hrs and cooking on gas grill to internal temp, Amazing ribeye roast. Tasty ribs, garlic/rosemary whole chicken and even haddock.

the smoker was clean, you know fire management, the cut was high quality, you know not to trust only the thermometer. most people wouldn't be able to achieve the same results. cool experiment though. I did my first ever brisket last weekend after watching quite a few of your videos, some multiple times. It was 15 hour cook and I rested for only 5 hours because we couldn't wait any longer to eat but it was great.. I already have some ideas and plans for making next one even better. thanks for the content
