Hi Giovanna, yes that would be perfect. Baking them on the stone is the best possible scenario (mine is the low-cost one haha), just make sure there's a lot of steam in the oven when they start baking.

Love rye bread! How and where do you store your breads and normally how long should you store rhem for?

Hi! I love it too, it tastes like childhood. It never lasts more than 2 days in my family, haha. It gets eaten in no time. You can keep it for several days, I like to heat it on a pan, when the pan is hot I add the bread and a tiny bit of water, then immediately close the lid. The steam brings the bread back to its original softness.

Where did you get your pan to bake the bread?? I have looked all over the internet for interlocking pans like that for bread making. Thanks!

I get this question every day, and the more time that passes, the more it seems like my pan is some kind of rarity, haha. I have no idea where I got them, it was many years ago, they are just two identical pans that happen to have the notches to hold them together. But I assure you that just two regular pans of the same size will work perfectly, just turn one upside down and use it as a lid. I have never been able to achieve your type of bread crust, color or crunch! What is your secret.

There's no secret at all, try my steps and you'll get the exact same result. Get some bread flour with around 12% protein content and that's basically it. Just follow the process, every step is important.

This is very likely. There was another person who had the same problem, they later checked the temperature with an oven thermometer and it was indeed lower than the oven thought. You could also try to preheat the oven a little longer or just turn up the heat. If they are pale at the end of the cooking then the temperature is definitely too low.
