Why would the court allow a defendant make a podcast instead of making a plea? The judge should have muted him and cautioned him about proper behavior in a courtroom. A plea hearing is not for arguing your case, it’s for recording your plea.
This is why Trump has had gag orders, once he starts talking he can't stop, his attacks are dangerous to jurors and witnesses. He said at the beginning of the hush money trial, "why hasn't anyone saved me from this? ". He was openly asking a support to take out the judge and others involved. Rudy is no different but he doesn't have the same pull as Trump, you are correct, the Judge should have muted him immediately.

Prosecutors should be reminding the judge that Giuliani was doing everything he could to evade being served his notice. These were not the acts of a man who willingly complies with what the courts require of him. He was being obstructive and deliberately so. The mocking of servers only shows the contempt he has for the legal system.

He tells the judge that he's always complied with the courts instructions and done everything he's been told, despite the charges against him. This is a lie. Deliberately evading process servers is in no way being helpful to the court. And if this is the way that he wants to begin fighting this particular case, then clearly by his own actions Giuliani was attempting to obstruct justice. There's also evidence of this in his mocking social media posting (right before he was finally served). This behaviour cannot be ignored. And he certainly should not be given the benefit of any doubt.
