Hi Max, in Cebu the lechon is also commonly known as "inasal or litson". Although it acquired the Spanish name, Philippine lechon has pre-Hispanic origins as pigs are one of the native domesticated animals of all Austronesian cultures and were carried throughout the Austronesian Expansion all the way to Polynesia. In fact, according to Antonio Pigafetta's documents the native Cebuanos have a very sophisticated culinary culture and different varieties of dishes to offer. When the Portuguese explorer Ferdinand Magellan and Antonio Pigafetta arrived in Cebu in 1521, the explorers found familiar stuff like roasted pigs and chicken. There was rice cooked in a clay pot above fire as in Spain, rice was also cooked in a bamboo tube place under fire, rice wrapped in leaves, like hanging rice or puso weaving, and rice made into a cake. The first Natives they met handed them fish, coconuts, bananas, and a jar of native wine. The crew of mixed European ethnicities also found familiar dish of fish, crab, goat, citruses, bananas, honey, milk, wine, rice, oil, millet, panicum, sorghum, salt, and abundant varieties of spices. They also feasted on 35 different meats on a welcome meal in Cebu. And the Cebuanos as “people [who] live in accordance with justice. . . they love peace, ease, and quiet.” Cebuanos were noble and sophisticated wearing gold jewelries, silver, pearls, precious stone jewelries and highly skilled people.
