I hosted my first ever free coffee pop up for my neighbors! It was my first time really serving and preparing more than like 5-6 drinks consecutively and with that, came some challenges. So here’s how I prepped for it, how it went, and what I’d do differently!

BOSTON FOG RECIPE: • The BOSTON FOG Coffee ...
Boohea Colonial tea is a type of tea that was primarily thrown into the harbor during the Boston Tea Party - hence the name, Boston Fog!
Ingredients:
- Loose Leaf Boohea Colonial Tea (I purchased mine from )
- Heavy Cream
- Milk
- Simple Syrup (1:1 Ratio)
Instructions:
1. Separately, steep milk, cream, and simple with Boohea loose leaf tea for 10-minutes. Don’t allow the milk or cream to rise past 70C. I used a ratio of 10g tea per 200ml liquid.
2. Allow each ingredient to cool.
3. In a jar, combine 3 parts infused milk, 2 parts infused cream, and 1 part infused syrup.
4. Whisk til thickened, spoon over cold brew

Nice! I’ve been doing catering and pop ups for a few years now, and a simple menu, volumetrics, good steam, and a good grinder come in clutch.

Now that I've rolled my eyes: Kudos! That's quite an ambitious menu for your first time out and 40 drinks in two hours for someone with not much experience handling multiple orders at a time is quite awesome. You've already clued in to minimizing your menu for the next outing. Keep it simple until you get your chops worked out. We don't let baristas run on their own until they've been heavily trained and had a bit of experience working with someone more seasoned. But the more you do it, the easier it will get. You'll figure out the mise en place that works best for you and your setup and then you'll be golden. A suggestion for your cart - to make movement easier, try fitting pneumatic wheels to the tool chest. Pneumatic wheels glide over terrain better. The stock wheels are more suited to smooth, concrete garage floors.

That Libra grinder seems pretty sweet. For a person that doesn’t switch between beans day to day or even week to week, would a grinder like that make more sense than a DF64 or P64 for example?

Dude by the looks of things you have about 20-25k of coffee equipment? I hope you don't take this the wrong way but how the hell can you afford all this? l would love up to upgrade my rocket apartamento but that ain't gonna happen any time soon as it's so low priority compared to more important life expenses. Congrats on the pop up btw, looks awesome!
