James. Please. There's no need for a spoon when you have hands! Just crack an egg, pour it onto your hand and let the egg white run off while cupping the yolk gently. Boom, separated egg yolks. And whites with NO YOLK IN THEM (which will stop them from stiffening, hence why your whites were a little runny for 'soft peaks'). Edit: ive moved on in the video slightly lol. I see you used the egg shell method! That one can work too, but ive found egg shells are very sharp and sometimes pierce the yolk. Hands are pretty soft, so they're still the more foolproof method (at least for me)

got much more nervous about the recipe after hearing your method for separating the yolks from the whites tip: crack the egg and sift the yolk back and forth btw the shells till the yolk is left (it’s actually really satisfying)

Soft peaks will never form if you have any, and i mean any, yolk in the white. And yes, that means you have to wash the whisks between mixing. That's why the mixture was so liquid

The tiramisu actually looked very nice after it had set up in the fridge! This video was both hilarious and horrific to watch as someone who works in a bakery and does this all day 😂. Psa to anyone trying out baking: you can’t beat egg whites to stiff peaks if there is ANY egg yolk in there (any fat in general, make sure your bowl is grease free and clean!), and also they have to be at room temperature to beat properly…they go weird and lumpy if they’re right out of the fridge. Now go have fun in your kitchen!
