Love your content but make sure ppl don’t poison themselves. :) perhaps put as text in your video right away as a warning or another way thats clearer. Not to be a hater but just worried of your viewers who might not know some beans are poisonous uncooked.

I am not vegan or vegetarian or anything and I love many middle eastern recipes. I noticed many of them are vegan like falafel, hummus, pita, and many other dishes like that.

The absolute BEST thing to make with bean flour is panelle, a Sicilian fried chickpea fritter. Served on a bun it’s pane panelle. Make a thick porridge of water and chickpea flour. Spread it out about 1/4” thick on a lightly oiled sheet pan and let it cool. Cut into rectangles. Fry in olive oil, and pile on a sesame seed bun, seasoned with freshly ground black pepper. Trust me, you’ll love it.

I was hoping that instead of using it as a bean substitute, you would use it more as a flour substitute, as in baking(pancakes, desserts, etc.) or more gravy, casserole or bread type dishes.

Look up besan, it's chickpea flour and is a staple in the subcontinent. It's not a substitute for anything actually but is its own think and has its own recipe. For flatbread like things, you can make chilla. For fritter, make vada or pakoras, for bread like cravings, make the even more delicious dhokla. You can make roasted chickpea flour into a refreshing yet filling drink called sattu.

I actually created different bean flours using a grain mill, so the result was very fine. I combined them w/ wheat flour in yeast-leavened bread recipes, and a favourite was garbanzo flour for farinata, which was delicious but very fattening, as it required a lot of oil.

Great video, extremely resourceful. There's another Indian dish you could look into called chila. It is usually made with chickpea flour but honestly any bean flour could work. It is a savory Indian pancake and one can add an egg to the batter for extra protein. Come to think of it an okanomiyaki with chila batter could be fantastic, maybe I'm going a little wild here but try chila for sure.

When shopping for asafetida in Germany I discovered the name was "Teufelsdreck" Which made me laugh out loud As I understand it to mean "Devil's dirt"

In Sweden its almost the same, Djävuls-träck but "träck" means specifically excrement and not dirt. Can't imagine whoever named it thought the taste was very good.

My faves - with finely diced red onion, green chili, cilantro, and Indian spices blended in. Or with zaatar blended in or on top. Both are super good with avocado!

And one more thing, check out Shan tofu or Burmese tofu! It’s SUPER simple and made with bean flour! Oil the vessel you want to be the mould, bring 2 parts water to a boil with a bit of salt, and in a bowl whisk 1 part chickpea flour with 1 part water. When the water is at a roiling boil, add the batter and stir like crazy for a full five minutes (time it! It’s super important). Then pour it into the mould. If you don’t want it to form a skin, put a piece of plastic wrap or parchment paper on top, touching the tofu. Let it cool completely and pop it in the fridge. It will be ready to use in a few hours.

I'm kinda surprised that you didn't attempt a pancake/flatbread or noodles. Though, I'm not quite sure how to extract the starch from the beans, or even if they are high in starch?

Beans have to be prepared before drying. Cooking them 10 minutes later isn't going to mitigate all the problems you may have eating beans. They need to be soaked for an hour before drying. In other countries where bean flour use is daily, they also pulse the beans after soaking to loosen skins which they remove. Then the beans are dried and ground.

Here in Argentina we make "faina". Its like a sort of flatbread or pancake made with chickpea flower. I know it sounds weird but we eat it with pizza and it's amazing. It's not like we made pizza with chickpeas, no, we literally put the pizza portion on top of the faina and eat them together. It's also great with what we call "fugazza" (pizza but without tomato sauce and instead with a ton of onions). Granted, the traditional pizza (at least in Buenos Aires) it's way different than neapolitan pizza; it has a fluffy dough, it's way thicker, and it has a lot (a lot) of cheese and the faina helps.

Hey Andong! Indian fan here. We usually do prepare dal this way also, except, we may pulse the lentils AFTER theyve been cooked. Ive seem my mum use a hand blender and even a masher for this. But I think your improve version saves more on time and effort. Will definitely give this a try. (I didnt see any inside youtuber reference today hmmm... you just mentioned Priya directly 🤷🏻)

Heyyy , I'm indian , and when I think of bean flour its always pakoras and bhajjis , very very good , especially in rain and in winter , and also there is besan ke laddo which is sweet from chickpea flour , there is kadi which is yogurt and chickpea flour curry , dhokla and khandvi which is like a steamed dish from chickpea flour , from gujrath

This looks nice but I think there are compounds in beans that you shouldn't consume, and those are usually removed through soaking. Or so I've heard.

Thanks for info. I think it's a good idea to soak the beans (or lentils) first and then let them dry. At least in the case of lentils letting them soak is good and can even reduce anti-nutrients.

Even cooking it for 10 minutes as recommended by Andong in the comments will still destroy your guts. The secrets to beans is to soak them, use fresh water to put the beans in and bring that water to a boil. After that throw away the cooking water as well and then cook them properly in fresh water. Do this even when using a pressure cooker or insta pot. This is basic knowledge in the balkans, there are even jokes made about people being stupid and not adhering to this rule ;) Oh, and get a pressure cooker or insta pot, you get perfectly cooked beans in 40 minutes, don't forget to throw in a diced onion in the cooking water and for heavens sake don't throw away the broth, it's pure gold taste wise.

It isn't necessary to cook the beans completely before grinding into flour. But yes, it is absolutely necessary to soak and prepare them. The assumption is that, properly soaked first and prepared, the bean flour will be cooked later in foods where they are not the main ingredient anyway and not a problem for the digestion.

You should give chillas a try-an Indian chickpea flour veg omelette. I've grown up with the Indian spiced ones with onion, tomato, green chillies, red chill powder, coriander powder, and turmeric, but western flavoured ones can also be made.

Fave e cicoria. Which is this thing: blog.giallozafferano.it/raffikaelesuemaniinpasta/wp-content/uploads/2013/11/Pur%C3%A8-di-fave-e-cicorie.jpg It's a pure made with peeled dried fava beans (just boil the fava beans in water with a couple bay leaves for a couple of hours, until the beans melt, sauté your bitter greens in extravirgin olive oil with garlic and a hint of chilli, serve side by side). Your instant beans would be perfect. I can also think them in a pasta e fagioli type soup: just sauté diced onion, celery, and carrots in extravirgin olive oil (a little rosemary would work well too), with some pancetta (or whatever pork cured meat you have handy), add the instant beans diluted in water or stock, a pinch of salt, cook for fifteen minutes until quite thick. You may boil separately some small pasta and stir it in or leave the soup a bit soupier and boil your small pasta directly in it. If you make it very thick the leftovers should congeal, so the next day you may want to cut it in slices and fry it off in a fat of your choice.

So how do you remove the lectins? Soaking takes out the lectins. Are you going to soak them, then dry them in a food dryer? It's really important to remove the lectins.

Air dry the papads before frying, and they'll puff up much more. If you knead them well, they won't crack so much - though maybe that's due to the coarse milling here. I'm a big fan of pasta e fagioli type dishes, by the way. I feel like there's some Italo-Indian fusion potential there as well.

I do not think that this is good because beans are gassy so usually when you boil them you have to do it for fifteen minutes to get the gas out and drain them and then boil them again with hot water
