I used to work at Auntie Anne’s in college and my heart is screaming for wanting to fold the pretzels like the employees do. I miss it 👏🏼 Definitely takes practice to throw them up and twist them the way we did!

my mom‘s sourdough usually was rising almost over the bowl cause she made always a pre-dough means she added the yeast in warm milk with sugar add this to the bowl with flour and the salt then she added the sourdough starter she took out the of the fridge so it was at room temperature when she added. She incorporated the sourdough starter with the yeast mix and a little of the flour but not all. Then she let it rest and the yeast get to work maybe 1 hour. After this she added the remaining milk and worked the flour and milk into the dough, she let the dough rest and rise, she lift maybe 2-4 times the towel and give the dough a punch then she waits again. Finally after the dough almost overflowing the bowl she starts kneading and working more air into the dough then she set it aside again (she does the kneading in the bowl) so it can rise the last time. Makes fluffy bread with fine pores Sometimes she is adding cooked potatoes from the day before which she is pressing through a potato ricer to the dough so that the bread is softer
