To anyone who's asking why Rafael did not wash his chicken: It's actually advised not to wash the chicken before you use it, because the bacteria in the chicken spreads through the water and even the smallest drop can contaminate other work surfaces. It was strongly advised not to wash chicken before using by food safety regulations back in 2013. Cooking the chicken without washing it is completely fine, because the heat kills the harmful bacteria. There is a reason why chicken and other meats have to be cooked to a certain temperature. No hate to those people, I just want to spread awareness because it's actually more dangerous to wash chicken before use.

The reason for squishing it down is to make sure everything is in tact and the reason leaving the bake dish on too is having weight to let it remain squished down so when slicing, pieces won't fall off or worse, everything tears apart and your effort is ruined

Part of your problem is that you put a glass dish on top of it in the fridge, they used a cast iron pan if i remember from the video when I saw it. The point of that is to compress it all together so it doesn't fall apart and cast iron is heavier than glass. You also probably needed slightly more barbecue sauce since they used it as a binder to make it all stick together.
