Fish Recipe
Ingredients:
-2 Tbls.Oil
-1 large sweet onion, thinly sliced in half moons.
-6 (6 Ounce) Grouper Fillets, Cut 1 Inch Thick
-Sea Salt & Fresh Ground Black Pepper
2 eggs beaten
1/2 cup flour (I used tapioca flour)
1 cup breadcrumbs ( I use gluten free)
-1/2 cup broth (seafood, chicken etc)
-3/4 Cup Aioli
Directions
In large skillet heat 2 Tbls oil and stir in onions. Fry on medium-low until tender, brown, and crispy. Stir often. Set aside.
Season grouper fillets with salt and pepper. Coat each fillet in flour, beaten egg, and breadcrumbs.
Heat 1/2 inch of grapeseed oil in wide skillet, and when nearly smoking add fillets and cook 2-3 minutes per side until nicely browned.
Put Aioli in small bowl and whisk in 1/2 cup of hot broth for 1 minutes until very hot and slightly thickened. Be sure not to let the mixture boil.
Ladle the aioli onto the plate, place the fish on top. sprinkle with crispy fried onions and jalapeño. Season with extra salt and pepper and a squeeze of lemon.
