You need a bit more preparation to play organ farmer in RimWorld than you might think. First, a way to manage the constant mental breaks inflicted by the actual organ harvesting. Second, organs are valuable. Even in unmodded RimWorld, you can generally get one kidney, one lung and one liver or heart per person, that's up to 2000-3000 silver. All that generates wealth, which attracts raiders looking to steal what is yours. So you have to protect it. If you're running a modded game and you have mods like Harvest Everything, Death Rattle, Less Arbitrary Surgery, Vegetable Garden Medicine, you can get a lot of organs from just one person with a very good surgeon. Harvest Everything means you can get ALL of the body parts from one person. Death Rattle means they don't die immediately when missing a vital organ (other than the brain), instead they get a hediff countdown of sorts that kills them of organ failure when it reaches 100%, giving you the chance to save their life via a timely organ transplant... or quickly get the rest of the organs before they die. Less Arbitrary Surgery means that there are less stupid surgery failures, and the better the surgeon is, the less he will fail, and the less badly he will fail. Vegetable Garden Medicine lets you make Bandage Kits out of cloth, which are healing items that are Herbal Medicine equivalents (8 cloth gets made into 4 Bandage Kits with the Medical skill at a crafting spot). With a good enough doctor, this medicine will be more than enough to run your organ farm. And they never spoil. With these mods and one good surgeon (15+ Medical), you can generate tens of thousands of silver per prisoner. That's even more wealth which you have to defend. With a few harvests, you can easily rush the Archonexus quest, buy out any trader of your choice, the sky is the limit. I personally use it to finance the development of my Empire mod settlements, as raw materials to make the super materials from Archotech Expanded, or buy techprints, components and raw materials from traders. It's so easy, I don't even do it in most games. Third, is the temptation to do it in every game, which makes your games either too easy due to the vast riches it can generate, or too hard due to the large raids it can attract. It's your choice where to go from here.
Idea for another series: The Yes Men. You have to accept every quest given to you. Betray the empire? Yes. Give refugees money? Yes. So on and so forth
I fell in love with Ideology once I harvested my first skull from a 10/10 cute girl who tried to raid me. It's mounted on a golden spike, next to my solo colonist's bed. Best DLC ever. 👍 👌 Will harvest more skulls asap, but you never forget your first. ❤️ And now, to actually learn how to use ideologies properly.
Here's a little tip for anyone who wants as many prisoners as possible. In the game there is a percentile chance of an enemy pawn just dying on drop regardless of health. This can be adjusted in the custom settings going from garneted instant death or no instant death. The setting is called "Enemy death on downed" there's also a similar setting for colonists called "Colonist instant kills" which is kind of the reverse in the sense that it's the chance lethal damage will actually kill a pawn, the lower the percentage the higher chance your pawns will be downed when they should instead die. And yes on Losing Is Fun there is a near 100% chance of death on a drop.
The best biome for organ harvesting is the ice sheet. Sure it's hard to get started but once you have a warm base and a fungus farm you get an endless supply of raiders collapsing from hyperthermia outside your front doors.

you might want to focus on your ability to "please" your colonists, since mental breaks seem to plague your every run lol cool trick is to have a rec room/dining room, gives them two mood bonuses when they eat
If it's fully enclosed and you keep the roof exposed the middle bit acts like a chimney - raiders can't drop pod on top of the barricades. It stops drop pods from landing specifically in that area, where otherwise they wouldn't be able to escape without bashing things down and destroying your cooler. If you've ever had a drop pod raider land in a fully enclosed space with no doors you'll know what I mean.

Yeeeeeeeah... I spent one day doing that and now all my colonists are angry at me. I'm like COME ON you all need new kidneys and lungs. I gun down 50 tribesmen and no one bats an eye, you save a couple organs before two of them die, and they lose their frickin minds. 🤦♂️🤷♂️
They have no room for the pods to deploy their passengers, since every floor tile is taken up by a barricade, and characters cannot stand on barricades, they can only move over them.
