17:30 The reason you dont want to overmix after adding the flour is because you'll start working the gluten too much. Gluten is a protein that provides structure. When you overwork the gluten in a cookie or a cake, it'll make it more tough; think about bread - that's exactly why recipes say to knead it for like 10 minutes, to help build the structure of the gluten network

I've worked at a Subway restaurant in Paris a few years ago and we always received the cookie dough and the bread dough already pre-made and frozen, we just cook them in the oven and let them cool down before puthing them in display. I've always been looking for the bread dough recipe if you find it. I'll try the cookie dough, thank you so much for these videos !

As someone who worked at Subway (in Canada), we received pre-portioned frozen cookie dough, place it on a rack and bake it in the restaurants. The dough is made and portioned at the factory :)

The subway dough and cookies arrive frozen but are baked freshly in the stores. For baking the cookies, there are silicone mats that go on a tray in the oven with perfectly sized circles for the dough to be placed in which is how they get them so even and they come off the tray without sticking.
I'm pretty sure it's common knowledge in the US that Subway cookies are indeed Otis Spunkmeyer cookies. You can even buy the dough at Wal-Mart. Subway bakes the cookies fresh daily from pre-portioned Otis Spunkmeyer cookie dough

My tip for cookies pull them a couple minutes early leave them on the pan for about 15 minutes. They will be perfect and wont break your teeth later!! I ate hard cookies for year till I learned to pull them early. Very gently touch one of the cookies. If it raises right back they are done. If it dips and stays give it a about 3 more minutes. Hope this helps with all your future cookies so you can eat them for a couple days and they dont turn to rocks anymore!

Assuming the subway cookies are an american recipe with typical ingredients, not melting the butter may have been the right step considering how soft your shortening was. Shortening tends to be stiffer/more solid than butter here, so it's mixed with it for both cost and structure.

i worked at a subway for a little less than a year and let me tell you, the dough is FROZEN when we bake em 💀 the bread is also frozen :) subway is usually actually really clean and fresh BUUUUUT the bread and the cookies always got to me even if they taste better than absolutely anything there 💀
