Japanese rice is actually a bit sticky, hence the rice ball didn't form properly. Edit: no idea this would get this many likes 😮😮😮😮

Not washing the rice would have helped, too. I like sticky rice so I never wash mine. Comes out nicely no matter what type of rice it is.

@@Dolkarr you actually usually triple wash short grain rice and let it soak for 20-30 mins before cooking it so its sticky, that’s what’s used for sushi and onigiri

your onigiris didn't stick together because you've used the wrong rice. Japanese cuisine usually uses short-grain white rice, which has a lot of starch and sticks together really well. The rice that you used is a long grain parboiled rice, which is the least sticky kind since the parboiling process gets rid of a lot of the starch present in the rice(that already is low in starch compared to the short grain type)

There's long grain rice that works for onigiri and sushi (here in Brazil they call both types gohan but it means simply rice in Japanese) but this obviously wasn't it lol

Also I got triggered about his method of washing rice. Do not run it with water, instead wash it in a bowl couple of times until the water runs clear. It's quite important to wash the rice thoroughly to get the right consistency once the rice is cooked.

Hi David, you need to use Japanese rice or Sushi rice for your onigiri / rice ball. Japanese rice is different from most of the rice out there, even most of asian rice. Japanese rice is stickier and fluffier. It will help the onigiri to stick together & hold it shape. As for the edamame, it is actually soy bean. Tofu & miso are made out of soy bean. So, if you're okay with tofu & miso, you're probably gonna be okay eating edamame. And your ears are just fine. Don't worry too much about it.

He doesn't HAVE to use short grain sushi rice. The reason why it didn't hold it's shape was because of the high amount of oil in the fish. Side note, I'm assuming the rice wasn't washed either

good to know i m not the only one to do that. If something is beyond salvage, sometimes i'll smash it so it will be 100% ruined by me on purpose rather than unintended ruin. Runs in my family as my nephew is like that as is my uncle. I have the maturity to know not to smash expensive items like laptop unlike my nephew who is 6 years old

David, Edamame is literally just a different name for a soy bean. If you were allergic you would have found out even just by eating the other foods in that very meal lol (like the soy sauce and tofu)

Yes! I’m very allergic to soy but I was watching this anyway and it was so frustrating after eating miso (made with soybeans), tofu (just literally soybeans) and SOY sauce (I don’t have to explain that one) he definitely would’ve known if he was allergic after eating all that

He's kinda clutsy and markedly doesn't have an education in the culinary arts so he does things that no educated pro would do. If he went to school for cooking he'd know better than to try some of the stuff he does exactly like they are in videos.

I believe it’s the wrong kind of rice- a lot of asian rices are stickier or have more water in them, and the rice you’re using might not be one of them.

Not really. East Asian rice is short grain and sticky cause they eat with chopsticks. Here in South Asia, since we eat with our hands, long grain non sticky rice is the way to go.

you’re not supposed to boil miso or it’ll have bitter notes and kill the pungency of the miso D: I see Japanese chefs turn off the stove and then put in the miso thru a strainer and let it dissolve that way so the taste is still fresh

A fun trick David: if you add soy sauce to the mirin-sake-sugar mix, you have teriyaki sauce! No joke. Cut up some chicken, dresge in potato starch or cornflour, cook on a pan for 5-6 minutes, add the sauce and cook til it reduces. The best damn chicken teriyaki you'll ever eat. You'll never use the bottled sauces again.

I recommend using Jasmine white rice for most of your Asian dishes! You'll get that slightly sticky texture that you want. The grains themselves should be a bright white.

Jasmine is good if you're eating particular kinds of foods. It usually has a stronger flavor and aroma and a different texture so a shorter grain that has a sweeter taste pairs better with Japanese food.

Japanese rice is a specific variety of short grain rice that has a ton of starch in it that remains even when you thoroughly wash it (wash your Japanese rice). Long grain rice just will not achieve the same results.

Yeah, you used the wrong rice. Rice typically consumed in the west is long grain rice, while in asia it's short grain rice. Short grain rice is stickier than long grain,, basically you couldve just used sushi rice for the onigiri and it wouldve turned out great

Some Asian rices are long grain though - basmati and jasmine come to mind. And jasmine rice is sticky enough to eat with chopsticks (not quite as sticky as Japanese rice, but it's a good substitute for most recipes).

You don't want to "simmer away" dashi, it consists of very volitile flavors and should not be simmered any more than needed to keep those intact

I was trying to look for an answer to this on Google and it said if you're allergic to soybeans that you're not probably allergic to legumes and other beans but I don't know if it works the other way around. Another site said you can be allergic to some legumes and not others. Maybe David is not allergic to all legumes, soy specifically, but I am certainly not diagnosing his allergies. I think he might want to have a doctor find out which legumes he's allergic to. It would make some recipes possible for him and beans are a good source of fiber.

Fyi Japanese miso loses intensity in flavor when it's simmered for a long time. It isn't typically as hearty as Korean soy bean paste, for example, which intensifies in flavor as it is cooked. As other people mentioned, it totally is the wrong rice. Japanese or Korean medium-grained rice is ideal. David's rice looks like Uncle Ben's...

I’ve made Ries Japanese breakfast quite a few times and think you forgot to marinate the salmon and ended up cooking it right away. It makes a big difference if you marinate it overnight. Try it and let me know how it turns out!

Edamame is soybean. Salted and fermented, and you get Miso. Simmered and strained-out, then hit with usually magnesium chloride to coagulate it, and you get tofu. :) *Maybe* something gets neutralized with the ferment or long cooking. Maybe it's a textural thing that doesn't jive with you, like tomatoes for me.

OMG David! Yes edamame are in the same family as peanuts, legumes and SOY. I have this trifecta of allergies and I can't have edamame or miso (cause it's soy)....

If you ate the tofu in the miso soup, then you shouldn't be allergic to edamame. Edamame are just soybeans. Tofu is made from soybeans.

miso is made of the same thing as edamame: *Soybeans*. if you were fine with miso then you may be fine with edamame.

processing can change if someone has a reaction to something or not, a lot of people who are allergic to a raw form of something make not be allergic if its processed or cooked in a sauce for example

Miso is fermented, which completely changes the taste and quality of the food but also it’s literal chemical makeup. Like once something is fermented, it’s not the same food anymore. Would not recommend eating raw soybeans just because you’re fine with miso.

Cooking or processed stuff can change how people react to stuff (for example, I know someone who is allergic to coconut but can eat a whole plate of lemon coconut squares without any side effects)

Just a suggestion for the rice calls- Try Using Nishiki Sushi rice (can usually find at Target, Walmart or Amazon, etc) Then add to rice cooker with rinsed a few times sushi rice, a tablespoon of regular sugar and a couple splashes of Rice Wine Vinegar (either sweetened or unsweetened is fine-I use sweetened) and it comes out perfectly every time-hint of sweet, super sticky and SO good! 🙂

Hey David, not sure if you’ll run into this problem...but to avoid frustration besides you already hating cream cheese...here is my advice. Definitely use the Bain-Marie method for your Japanese cheesecake. The recipe I used advised that I directly melt the cream cheese with butter and it turns into this curdled mess. Anyways, first melt your cream cheese over your Bain-Marie and get it to a smooth consistency, then add your warmed up milk, and then finally cold and cubed butter. It’s just a huge headache otherwise. Also, I’m not an expert or anything, but this is what helped me on my third attempt.

For onigiri I would definitely use glutinous rice. It's natural sticky and the same right they use for sushi.

You can get Japanese sushi rice that will stick also add viniger if your just using regular rice!

11:59 you need sushi rice, which is super sticky and a bit sweeter. Some brands you might see in the store would be Nishiki and Sushi Chef.

also for the rice you might be using long grain rice, you might want to try japanese short grain rice for better cohesion

When you make your rice, firstly wash it at least twice, rinse the rice until the water turns clear and make sure to agitate it! Let it sit in the rice maker with the water for 30 minutes before and season it! Make some Zu, which is just water, rice vinegar, salt, and some sugar! Season once Done and you’ll have the perfect sushi type rice~.

An edamame is a soybean that is harvested when it's immature and still tender green. While edamame beans are typically eaten as a fresh steamed vegetable, soybeans are left to mature and harden.

dashi can be made from several things not just fish: kombu, katsuo, anchovy, shiitake, or a mix between any of those.

Friendly miso pro tip: don't bring the soup to a boil or strong simmer after adding your paste. Not only is the miso's flavour fresher, but you won't risk killing off the probiotics that make miso so healthy!

You should use the japanese type rice (short grain rice). They are sticky in their own already and will make the onigiri stays in shape
