As someone who can't stand cilantro, I still love birria beef and the consommé. The lime does the "heavy lifting" for me that the herbaciousness did for you.

THanks for you channel. I made this birria yesterday. The tacos were amazing. But then today I made the ramen. OMG!!! I loved it, better than the tacos. Tomorrow i plan on making the Crunchwrap. I cant wait. The rest is in the freezer for those days when Im not able to cook. This is the best thing Ive ever made!

Without a doubt, the crunchwrap is the PERFECT hand-held food, regardless of what delightful things you put in it. My son was eyeing the crunchwraps at Taco Bell the other day, and while I knew he would be disappointed, ordered one anyway. The thing is, when you make a variety of homemade Crunchwraps, the ones from Taco Bell are just sad!

You need to try birria as a soup (in case you haven’t, of course). Serve the broth with the meat, parboiled white rice and cooked chickpeas. You can have tortillas on the side and add some lime, onion and cilantro.

as a mexican who grew up eating birria, I am very proud that it got this mainstream. This the most authentic form of mexican food going around and when I see the gringos do it, they do it properly and with respect which is something I am not used to. ...and yes dear David, tortillas must always be cooked down/heated, preferably with oil or that birria fat.

I am part of the group that tastes soap in cilantro. I’ve eaten birria plenty of times already, and i really can’t taste the cilantro in it. So I keep going back at least once a month.
