Friends! It was a friendly spider that crawled behind my ferments. I noticed it and after I was done filming I put him outside. I don't mind spiders but I do prefer them outside my house to eat all the nasty bugs :)

I felt that smash. I've seen a family on RU-vid who made their long term storage last a year and yeah every meal wasn't perfect but her husband was out of work and she has 6 young children..... I can only imagine her relief at her cans of food and bulk items to feed them kids decent food.

A little tip… The strip of metal on your shelves below your cans, paint that little strip with chalkboard paint, and get the erasable chalk board markers. You can write what’s on each shelf that you can see, and Josh can see it without having to touch all the jars it just makes organization easier. You can also wipe it off and put something else there when you’re done. Great job on the basement!

Plus.... earthquakes are not rare in her area.... anything to prevent those jars from jolting and jumping off the shelf....(on the front and back, as she left walking room behind)

One thing to consider: label the ends of your frozen meals. When they are stacked, you will still know what you have without having to move several.

Something you may want to consider regarding your shelves where you have the back part you go walk into to push stock forward, I noticed that you have nothing on the backside to stop jars from toppling over when you push from the front. By adding a small wooden dowel across the back will help from having your jars slip off the back when you are adding and pushing from the front. Protect all that hard work!

Also something for the front. I live in CA where one little earthquake would shake those cans right off the shelves. So maybe a small wooden dowel for the front and back.

Hi Becky, I had worked for Frito-Lay Agricultural Research Station in Northern Wisconsin. I have years of knowledge of potatoes. You'll want to put some slats under the potato crates for ventilation. They should also be stored in a dark area with no light, and temperatures in the low 40's. If you can achieve all that, your potatoes will last till May.

@@MFV77, as long as you do not wash them they will store for a very long time. It depends on the variety to. Some store better and longer than other. Having the ideal conditions extends storage. I use to be able to have potatoes stored in my basement until August the next year. It use to bother me when I had to purchase potatoes that I would usually get for free from other local farms. You might want to get some of those square foam/rubber floor mats that snap together like puzzle pieces. They are really easy to customize to your space. If you drop something, it will be less likely to break. Also, it is nice on your feet. I love using them on my basement concrete floor.

PLEASE have hubby put a small strip of wood on back of shelves for you so when you push jars back they will stop. You will still be able to work behind. He can even get strips like the shelves are made of. You are wonderful! But when you get excited you make me nervous, but very happy! Keep being you ♡♡♡

Becky: I am so glad you got an upright freezer. A hint I use if I make freezer meals - I put foil in the bottom of the dish, then the contents and then foil over top and freeze them solid. When totally frozen I take them out of the glass container or casserole dish and put the foil wrapped package back in the freezer. I found that sometimes glass containers can slip out of the freezer and break - then you have lost not only the container but the meal as well. If it is a frozen package there is nothing to break. Plus you can stack the frozen packages more easily and they take up so much less space and you have the use of your containers for other things.

I was flinching the whole time she was putting jars on the shelf because she wasn't fully paying attention. I was scared she was going to push jars off the back because she just kept pushing them back without looking to see how far back they were. She had boxes leaning so I knew something was going to drop. Glad it wasn't a lot. Becky I think it may be best to do a voice over when you're organizing your shelf. That way you can focus on what you're doing because you had me jumping the whole time. 😁

Don’t keep that jar you dropped in your storage. Open it and use it or put it in the fridge. It might have micro cracks and could lose its seal.

Tip: you can use one of the baby-proofing latches to help ensure the upright freezer gets closed solidly. One you get into the habit of latching it every time you close it, it'll keep you from leaving it open. They also make temperature alarms that will alert your phone if the temp falls below acceptable levels.

yep did that Works Great🎉🎉🎉I only have an upright and freezer above refrigerator so My hubby is over the road truck driver- and I make up meals that fit into foil bread pans , freeze in the pan lined with a store bought bread bag . That way he can have a meal from Home in his Lunchbox size cooker Nice and Hot …cut the cost of truck stop food.

My grandmother had just finished canning tomatoes and beets and fell down the stairs with all the jars- when my grandfather saw it, he thought she was bleeding to death from the broken glass and fall- he fainted at the top of the stairs- fortunately, she was only bruised but lost all of that hard work- it’s a story of canning I tell my daughter, who is a big time canner each year to remind us what “can” happen during canning season😬

Strongly recommend not leaving that box of onions on the concrete floor, it will likely attract mould. Raise it a little on a couple of planks of wood, or sheet of wood, or something like that. LOVING your food storage in the basement.

I was more concerned about the onions being stored beneath hygiene and cleaning products. My guess is that these things will be moved to a non-food storing shelf. If the Listerine should spill in the onion box you will have some drunken onions. I love your videos and recipes and enjoy watching you can foods, it has broadened my skills over the basics.

Hi Becky, chiming in with many others to say, invest in securing your shelves! After dropping a jar of pickles accidentally with a similar set up to yours, I invested in rubber floor mats and secured metal straps to the front and back of the shelves to keep the jars from sliding off. You are such an inspiration, thank you for sharing your journey with us!

Yes, please be careful going up and down those stairs. Baby onboard! LOL! But really, my grandmother had Alzheimer's Disease and she opened the basement door thinking she was going into her bedroom and she tumbled down the basement stairs and broke her arm. It can happen at any age. They actually rebuilt the stairs and added a couple of turns so that if someone fell, they only fell 5-6 steps and not all the way down. That saved my uncle when, many years later, he did the same thing and fell on the same stairs. My sister has a set of basement stairs that are steep. There isn't room for rebuilding the stairs by winding them. But she never carries anything up and down those stairs. If she has to take something to the basement, she goes around to the outside door. She always keeps her hand on the rail as she goes up or down and never carries anything on that staircase. They put a lock on the door too so someone can't accidentally open it and fall. She has a pull wagon and if she needs to store something in the basement, she uses the wagon and walks to the outside door of the basement.

I was telling her she needs to have an inch or inch and a half "lip" on the back of the higher shelves on the racks. Then the jar would "bump" and let her know to stop pushing while she could still put the food up and over them.

I was waiting for them to fall off the back side or her hand catching one of the front ones right there on the edge!! I don't think I would trust the hot pepper sauce that dropped and was put back on the shelf. I would be afraid of glass shards in the jar...

I am a 70 year old Aussie lady (I live just north of Sydney) and we are coming into Spring and it is a beautiful time of year. My husband has always been the gardener but recently he is unable to garden with surgery coming up on a knee issue and so cannot dig the garden. I have a heart condition and have to pace myself but I have been given free reign of the vegetable garden (not large) and it was suggested to me to try a "no till garden" which I noticed in your potato haul and I am very interested. I have the assistance of my 13 year old grandson who loves to garden and he has cleared the garden for me and is helping me plant. We had a lovely day picking out seedlings and now to plant. Tomatillos are not available here in Australia to my knowledge and I came across some seeds from the "Lost Seed Company" in Tasmania and put them in two years ago and my niece by marriage is thrilled and I have so much pleasure in seeing the eyes light up when I give them to her. My sister in law is from Mexico City and her son met my new neice when visiting family and they have set up home in our city. She is a brilliant cook and I am excited by her cooking the tomatillos. Hey Becky! Great setup you have in your basement! With the area that we live in you might want to consider putting earthquake straps on your shelving to prevent the jars from sliding off the shelves - it would probably also be a safety measure because you are putting jars on from both sides - it would stop you from sliding them off the back accidentally. ❤

I’m going to be a Nudge. I apologize. You need to move the onions out from under the chemicals. Any kind of chemical goes under any sort of food. Do you have a large generator? I can’t remember if you have mentioned that before or not. We have several freezers with our homegrown meats and veggies, so a portable generator is a must for us. Looks like it would be for y’all too. I’d hate for you guys to loose all the food in your freezers because of a power outage.

Hi Becky. Not sure how Washington state weather is. We use energy no matter how you look at it. But just though I would share this with you. I do t grow all my own food yet. But when it’s on sale I buy big. I do all my canning outside as it will waste less energy and I keep my home cool in the summer. Once winter hits I move it inside. Just a tip and thought I’d share as I see you try to reduce your carbon foot print. Also I have natural gas piped outside for my grill and burners which make life so much easier than getting. Propane tanks filled. Like your videos and Josh does good work! Keep it up!

Just an ergonomic suggestion for your upright freezer... Not a huge deal, for sure, but most newer freezers/fridges have reversible doors. For convenience sake, you might want to swap the direction of your new freezer's door swing. Since you seem to approach the freezer from the right, being able to open and access it from that side will be so much easier in the long run. SERIOUSLY consider this: buy Drylok concrete floor sealer/paint and double coat your basement floors with it. They will be sealed and a pleasure to mop when needed. Additionally, use Drylok for the unfinished cement walls. It will keep moisture out! And give a nice appearance to the room, to boot. You can choose white or other color. You will be so glad you took the time.

Suggestion for your potato/onion curing stations: check a restaurant supply store for the plastic trays that go through commercial dish washers. They will allow air flow and they are stackable!

You need a kitchen trolley! They are so handy in an industrial kitchen and at some point while you were grabbing boxes of cans I was like "she needs a trolley" then you ended up breaking 2 jars and I'm like aaahhh!!! She really needs a trolley!!

Consider attaching a strip of wood along each shelf on the wall side so nothing falls off. Don’t leave the fallen jar on the shelf the seal might no longer be tight or there may be a crack. Safety first.

I have an inventory list of items in my freezers. Each list is for what is in that freezer. I tape a plastic notebook page sleeve to the front of each freeze in which I place my printed inventory list into. When I remove something, I remove one of those items from my list. This is called a running inventory that is used in restaurants. I can look at each list before I place orders or go shopping. No buying things I don't need or forgetting things I do need.

Becky…I’m not sure if this is a concern in your area but…. Where I live when it starts to get cold, mice come inside looking for warmth. A mouse can squeeze through a 1/4” opening (about the size of a pencil). They will eat any packaged goods that they can get to. You may want to think about storing your pastas in that yellow lidded bin. They can even eat through a bucket given enough time. Keep check on all your plastic containers for any evidence that they have tried to eat through. Maybe even traps under your shelves. If you don’t have to worry about field mice, please forgive my ignorance.

I also worry about rodents getting in where they're not welcome. But what worries me even more is what comes after the rodents. . . . . snakes. It happened so often on our homestead. Especially with doors that open immediately to the outside.

I understand snakes are freaky to some people similar to how spiders are, but most snakes in the US are completely harmless and want nothing to do with humans. Although a cat would probably handle either easily.

I just learned that when your jars are empty fill them with water and then you always have water saved and you can use the water in the pot to waterbath or pressure can. And if something happens you have stored water.

Hook a bungie cord across the back of each shelf about half way up the height the jars and u won't need to worry about pushing them back too far off the shelf.

Oh! My freezer used to pop open ALL THE TIME, but I got one of those like... baby safety freezer lock things, where basically you have to push down on the lock to have it release and open up. Otherwise, it stays super securely tight and closed all the time! Was like $5 on amazon, and works super well. It's also way easier to use than how I described it. Definitely check that out, since you're probably going to end up looking for baby proofing stuff anyway!

Get yourself a chalk pen. You can label the shelves themselves. Also consider adding a thin bar about an inch above the shelf at the back to prevent you from accidently shoving them off the back of the shelf. You can still access it from the back but it will help

Becky please, please, please!! Get some plastic stackable bread trays. The allow for airflow and the mainly use vertical spacing. You can store onions potatoes and carrots for months with easy access to what you need.

Becky my dad was an avid canner. He was also a crafty man. He reused the lids for jarred seasonings, some he drilled a few holes into for sprinkling and others he cut slots into for banks, he would also use them for jarred gifts, ex. soup, cookies, dips, etc... he was one of the thriftiest men I've ever known. This episode was mildly anxiety ridden for me. I kept waiting for you to break one of your jars. I was expecting it to be one pushed it off the back though. I am very like you, so I could just feel it coming. Please be careful pushing yours jars on those shelves, don't want to loose anymore of your hard work. I know from experience. 😉 P.S. I have used dowel rods and screws to put barriers for the sides of those the same shelves you have. You can also use the dowel rods for "lanes" for the cans to make it easier to keep them in line.

20 years ago I started just popping whatever I ate into a blender, garlic and all for my baby. I went from smooth puree to thicker, to chunky to normal. My kiddo eats everything, and has no allergies. I can't say for sure this is what helped, but I think it may have played a part. The fact that Becky's baby food will be organic and largely from her garden is amazing!!!

Couple things that helped me with my shelving was having step stool, table in the area to work from and to sit the next organization stuff on (keeps off the floor) and something on the backside of your shelves to keep from pushing out the back. Everything looks awesome and I am so excited for you and the progress you have made. Great organization!!

I kept waiting for a jar to drop off the back of one of those shelves as Becky stacked them and kept pushing them back. Totally didn't expect her to accidentally drop jars in front of her. ETA: Becky, I forgot to mention that if you get a child safety lock for the new upright freezer, you won't have an issue about accidentally leaving the door open. You'll need the child safety stuff in the next year or so anyway. Putting one on the freezer earlier might give you some peace of mind about whether the upright freezer is secure or not.

Becky, please learn from my mistake! Don't wear flip flops when you are in a hurry and accessing your upright freezer. I did on 9/2-- the door whacked my foot hard, completely removing my large toe nail. My podiatrist said it will be a full year for the nail to regrow completely. Love the idea of using those wooden craft crates for the potato storage. I completely agree with you about the onion amounts...it is so easy to go through that much! Your wonderful home canning will also eventually make lovely baby food. Maybe you could get some inexpensive foam floor mats from Harbor Freight to put in front of your canning shelves for cushioning.

We had an upright freezer get left open...lost everything in it. I bought childproof straps for it. Takes an extra step to get into the freezer but worth it for peace of mind. Now I never have to worry about it. They cost like $10 on Amazon.

I don't have a freezer alarm yet, but did get the childproof straps from Amazon after finding my garage freezer door ajar. Thank goodness I didn't loose any food.

I recommend putting a lip/board across the bottom of the back of your storage shelves so when you are pushing back you don't accidentally push off the back.

I had half my kitchen pantry shear off the wall a few years ago. Lost a lot of my canned food. So heartbreaking. I understand jar loss. Also, because of that, it makes me super nervous that your selves are not up against a wall in the back. I understand your reason, but that's a lot of hard work that you don't want sliding off the back accidentally.

They aren't braced against each other, have no lips on the edge and aren't much heavier on the bottom than the top either, let alone labeled for rated weight capacity. I would love to see these points addressed eventually but see the current projects take precedent.

She needs to put Josh's brain to work on making those shelves more safe. Even just linking them together with bungee cords to make stable and keep jars on shelf.
