Torcetti are traditional Piedmontese biscuits typical of the area where I live, that of the Lanzo and Canavese valleys.
Their name recalls the twisted shape of the biscuit; they are easy to make and with very few ingredients, but their taste of butter and caramelized sugar I am sure will win you over!

So, fasten your aprons and let's start messing around!
Ingredients for about 20 torcetti:
3.5 g brewer's yeast
200 g flour
110 g water at room temperature
4 g malt (optional)
3 g salt
65 g butter
brown sugar or granulated sugar
-The original recipe does not include sugar inside the torcetti, so I didn't put it. I can assure you that the one on the outside is enough.
-Malt is optional, it adds color to cookies and helps leavening, but it is not essential.
-I used brown sugar because I like to feel crunchy under my teeth, but if you prefer them less rustic you can use granulated sugar instead.
