I really enjoy watching you fish and am jealous of the number of species you have to choose from. Up here in NH we just don't have that many to fish for in saltwater. A hint when it comes to your onion overpowering your ceviche, switch to shallots. They are more mild and delicate. They do kind of have their own flavor but they are very much interchangeable with onions. If you try them let me know what you think. I'm betting you love them as I do. --dennis

I’m from Massachusetts and live in Florida now so I’m trying to learn how to catch different fish species here but these videos show you guys mostly catching bait fish from shore. Up north we don’t bother with fish that size. Why don’t you guys want to go for big fish?
Time of year. We don’t have the big redfish, trout, jack crevalle, spanish mackerel, or pompano around. If you check out my videos from spring, summer, and fall you’ll see plenty of big fish.
I've been a lifelong fisherman freshwater only being landlocked in Oklahoma and I don't care much for the taste of fish, but have done the obligatory catfish fillet or crappie fry...but you folks made me HUNGRY with this one.
Great video. Saw a tip this morning from a fellow RU-vidr. Soak your sliced red onions in cold water for 20 minutes or more, and that helps eliminate some of the "harsh" flavor. Might be worth a shot!
I don't usually watch your videos through the cooking part because I'm not much of a cook, but I did this time for some reason. I'm glad I did. Ceviche is on the menu now!
Great video! I'm not a raw onion fan, but it's a must in ceviche and guacamole. I squeeze lime juice in a bowl and add the onions, leave for 15 to 20 minutes, then use them in my recipes. My family, who are also not raw onion fans, will eat my guacamole every time.

Matt, I don’t think I missed anything but wanted to ask. You add lemon and lime juice to the whiting and just put it in the refrigerator for two hours? Their is no frying the fish correct?
soak the onion separately in lemon juice and salt...it really takes the edge of the Bermuda onion. then add it to the mix...the onion ends up much sweeter.
