Ben ik toch benieuwd wat beter is: reverse tot 54, afkoelen en dan een sear of reverse tot iets boven de 40 graden en dan afgrillen tot 50 en door het rusten laten doorschieten tot 54.

why put your thick steak in a cast iron pan with diced onions, and clarified butter and rosemary, with aluminum foil over it and precook it in the oven when you can do all of this and make your flat top an oven? I guess if you are camping and don't have an oven? I love my portable 3 in 1, propane grill, griddle, and pizza oven/ regular oven.
Nah. I have an outdoor kitchen and it's basically just a big grill. I could cook inside. But if I could cook outside I would choose that almost every time. Weather permitting of course
