That's igado, and is a dish from my region. I understand you used lemon juice to substitute for the vinegar. You also skipped the raisins. Not too many Western people like liver. I suggest you slice your carrots in the same way you sliced your red pepper - it is more crispy than when it is grated Judging from your ingredients I am sure you were able to approximate the standard igado taste...congratulations! Almost there. But dont overdo the carrots and please dont shred it. Just cut it to strips. Same as the other ingredients as wel as the meat and liver. All are cut into thin strips (julliene). But since the basic ingredients are all there so you should be fine. It will still taste good. It is just me being a bit critical because igado is s dish from my hometown (ilocos). And i am just giving you this tips for you to at least make the dish authentic as possible. But anyway its your kitchen, so you are the queen. Just do the things that makes you happy. Love lots! ❤❤❤

Hi Liza, I will give you a trivia. In the Philippines we have a variety of sauces When we eat you must try this. When we eat FRIED FISH we make a sauce. Take note these sauces are for Fried Fish only. Options No. 1: Soy sauce with calamansi/lemon with ( chili ) optional. No. 2: Soy sauce with Tomato (chopped in a cube size) and chopped Onions with ( chili ) optional. No.3: Soy sauce and vinegar with minced Garlic. 😊 ______________________ When we eat BULALO or BOILED PORK. When we eat SINIGANG using pork or Shrimp or Fish Bangus (milk fish) we make a sauce: Options: No.1: Fish sauce only with ( chili ) optional it depends on you 😅 No. 2: Fish sauce with Calamansi/lemon with ( Chili ) optional. and the last one when we eat DRIED FISH by the way do you have dried fish in your country? if you have then make a sauce 😂 No. 1: Vinegar and Minced Garlic ( Chili ) optional. I think why Mom Olga and Sister Liza don't fry the garlic and the onion first in some of their dishes it's because they refrain themselves eating too much oily food or they retain the freshness of the onion and garlic rather than frying it. It's also OK we had different ways of cooking the most important is the taste.
Integral part of Filipino food is the sautéed garlic and onion. It won't be flavourful without it. Filipino taste buds are more for the savoury unlike the europeans in general.
As you see how professional chefs do is they fry the meat first to take some fats then take some oil away and place the garlic and onion halfway….that will give more flavor to the meat.
