Clearly celery, clearly rosemary, equally, you can also use thyme and leeks in this recipe if you want too xxxxx my bad!

I love that you aren’t afraid of cooking with oil. I feel like these days a fair amount of vegan RU-vidrs cut it out all together but dishes can lose something special if you don’t at least use a bit of oil, especially sautéed vegetables. We want healthy food but the food also needs to taste amazing, particularly if you are trying to get a spouse or family member to eat more plant based meals.
Whole foods plant based is just an even healthier way to eat and there are tons of delicious wfpb recipes. I personally love cooking with oil, but I dont think there is anything wrong with either way of cooking.
I don't cook with oil for the most part ( and actually don't miss it one bit) but I do have cold oil because it is still healthy. Heated oil is just not good for the body any way you look at it. I hate greasy food anyway...it is just gross to my taste.
if you put that tomato paste at the beginning stew will have even more rich smoky flavor. i learn this technique from african cuisine where they do it when they cook jollof rice edit: also if is stew too much sour or you want to make it easier to digest add hint of baking soda (no baking powder) at the end to neutralize acids

Bri Gilmore Hi. Can I make a suggestion? On RU-vid, look for Connie's Rawsome Kitchen, then look for beefless powder. I use it all the time, and it does make Foods taste like beef. Also, she made a chik'n powder. It's called chikon soup base, and chikon is the way she spelled it. I've used this also, and it does make stuff taste like chicken soup. Although Connie is strictly a plant based vegan, she cooks the majority of her recipes for her family, who are not strictly plant based, so if you're not strictly plant based, she is a genius with her recipes.
I have done the beef-less stew now for the 5th time and I fall in love everytime I eat it. I am not a vegan person but am slowly adding meatless and less animal product meals too my every day life for many reasons. But the most thing that makes me happy is that my *dad* LOVES this meal aswell and he looks as happy or even Happier than eating a piece of steak or so. Keep up the good work! I really do appreciate it!! :)
I have made this stew now twice, and am SO impressed with how bold the flavors are. I added some pearl onions, leeks, and pared it with some homemade sour dough bread, and OH MY GIDDY AUNT. Em, I don't doubt that! We spent the month of May, a few years back, backpacking in Ireland and it was miserably cold! May in Florida is beautiful! These last couple months of summer are brutal though! It's stifling most days and the UV is dangerous. Still, I love living in a subtropical place!
Your beefless stew reminds me of boeuf bourguignon, which is a traditional French beef stew that's cooked with red wine. And... yes! Definitely give us the recipe for that vegan beef broth, please.

That looks absolutely delicious! I’m the only person in my family transitioning into a vegan lifestyle but I’ve gotten permission for Christmas to make most of the sides and one of the mains completely meat, egg, and dairy free! Definitely making this as one of the sides, it looks incredible!

I made this for my family and vegan friend and it went down an absolute storm! Thank you lovely Rachel, even my carnivore hubby was impressed!! Substitutes/ additions/ tips that work: For the stew, I didn't have coconut amino. I didn't have liqiud smoke so I relied on 'smokey flavour' of putting my tomato puree in just after sweating my shallots', I added a small red onion, cayenne pepper and a small scotch bonnet with most seeds removed. In addition to Rachel's seasonings I added Dunnes River everyday seasoning and cayenne pepper to my mushroom 'meat'. The tip to add bicarbonate of soda (UK), baking soda (US) is spot on! Half a teaspoon if doubling this recipe (which I did).

I love both of these recipes! the stew looks so good, and I think everyone should have a basic Stew recipe to get through the winter...yours looks Boss. For the spaghetti...i don't usually buy butternut squash but always have sweet potatoes, on hand (the orange ones)....and roasted sweet potatoes??? I went back to this stew several now over the years bc I love it so much. Since oyster mushrooms aren’t that easy to come by, I switch that out for Jackfruit and it’s delicious!
I made the pasta! I didn’t have the exact ingredients. I used a can of no salt added diced tomatoes and ground sage. The flavors were really good. Thank you! You have such great ideas 🙂

Heidi Faith convenience more than anything. I have two kids and a partner who are meat eaters. So it’s in the house. I like normal chocolate and milk alternatives I don’t like in coffee/tea. I cook mainly vegan/veggie dinners though. I won’t cook meat or buy meat. I have two kids and a partner who are meat eaters though and they’ve adjusted. Xx

My fave pasta dish is mix olive oil with fresh lemon juice and zest, red pepper flakes, and salt toss into some cooked linguine add fresh cherry tomatoes(uncooked) and parsley and thyme. Sooo yummy.

I JUST made this! It wasn’t as flavorful as I wanted (but also didn’t have the red wine) so after I added the oysters I made the sauce for them again and added it to the stew... very good!!! Also uses sweet potato instead of regular potato..what can I say I am southern..😊This is the first vegan recipe I made with success!
After almost 2 years I managed to make this recipe. It's been on my to do list since it came out. Super happy I didn't forget about it. My family could smell it from the driveway and gave complements the moment they could. We loved it! Super delicious, warm and comforting. Will absolutely make it again:)

10 years ago, if you told me I’ll be following a girl from the UK’s vegan recipes, I probably would have fought you. Now I can’t get enough of you recipes. I’m a pescatarian, but your recipes are to die for. I modify them most of the time, but they’re still very delicious. Love from LA❤️

Oh my good lord that stew looks amazing! For some really weird reason I’ve always been intimidated by potatoes and stews (probably because I’m lazy and they seem to take a while). I eat healthy, but like quick and easy meals and I’m getting so tired of them. I really want to get better at cooking, enhance my flavors, and just cook more elaborate meals! This looks so doable and yummy, I can’t wait to try it!

I just tried to make this stew and it is amazing! I wanted to treat myself to a hearty meal, with a little more effort than I usually put into cooking haha. It tastes great! I didn't have any red wine or Worcestershire sauce, but I added yellow mustard to enhance the flavour. Worked for me!
That stew is probably one of the best (maybe even the best) looking vegan dupes I’ve ever seen. I’m not vegan but I try to incorporate some vegan and vegetarian recipes to at least reduce the amount I eat (I also just don’t eat red meat in particular very often at all) and I am definitely going to try this. I've made the stew twice now and even made a double batch the 2nd time. This stew is so nice! I add in whatever veggies I need to use up - this time I had cauliflower and zuchinni. This is going into my weekly rotation! I cannot find those fancy oyster mushrooms but it still tastes nice. Meat eater approved too.
