If you are looking for that Indian carrot dessert, look no further. This is Gajar ka Halwa which is a super popular Indian dessert. This is of course part of my new series WILL IT MEAT? and we're going to see if we can infuse meat into a sweet dish.

Carrot 400g (grated)
Almonds 30g
Cashew 30g
Raisins 30g
Elaichi/Cardamom 4no (crushed)
Mava 100g
Milk 400g
Bacon 100g
Sugar 130g
Ghee ½ tbsp (7 grams)
Equal parts carrot and milk
Alternate option for Mava is ¼ cup milk powder

I love carrot halwa,I buy at Bangladeshi take out restaurants in the US,and I just know how good this recipe would be, as I am a pastry chef.

This is certainly interesting! I would rate regular gajar ka halwa a 7/10 if made well and a 5/10 or even 4.5/10 otherwise. Here in the UK, I've tasted a few that are just not nice because they contain so much ghee (which I can't stand the taste of!) that the flavour of the ghee totally overpowers everything else and all I end up tasting is ghee and sugar with some texture and a very mild hint of flavour from the cooked carrots. I am curious as to how the very distinctive, quite savoury flavour of the bacon fat would work in this context. I also wonder whether candying the bacon would make the end product better or worse.

I feel that candying the bacon will give you more sweet flavour and less of that contrast of salty and sweet. The bacon fat when cooked actually isn't too strong and I didn't go overboard with the sugar either so you actually get a nice taste of the carrot, that cardamom and some bits of a salty hit from the bacon which doesn't allow it to feel too sweet.

Loved the part about the bacon and nuts! 👍🏼 Would happily try it, though my brain doesn't usually buy into dessertified veggies unless it's pumpkin pie. Now I want a plate of pumpkin pie and bacon...

I don't recall ever having a dessert made in any similar style. Of course, carrot cake is still popular in the U.S., but I don't consider it similar to this at all. It's definitely making me curious, but I'm not certain I'll actually make it myself. Maybe the next time I go shopping, if I think about this dish... maybe I'll buy the ingredients. But I personally don't eat desserts except on very rare occasions. So.. I'm just not certain.

1950s American gelatin desserts: One was lime or lemon gelatin with shredded carrots and nuts. Your looks so much better! Bacon!

Oh wow that’s looks good delicious. Can I substitute the milk for heavy cream, or a different milk?

Yes you can! I'm not sure about a different milk. So essentially what you are doing is you are boiling down the milk and that makes this sort of thing we call mawa in India which I add as well but the alternative to that is milk powder. But yeah you could try it with cream and or another milk as well, just remember that other milks the flavours will intensify probably though I've never cooked those down to this extent but give it a try with a small batch and let me know how it turns out.

@@Sandie_J use full fat milk or coffee or less % cream ( not 35%) You can make it without powder, khoya(mawa) and condensed milk It will only make it richer I prefer traditional taste so i don't add it

Its one of my fav Indian desserts ... unaltered!!! I don't see how bacon would go well with carrots... perhaps with spicy maple "candied" bacon & walnuts as a topping... cooked with cinnamon...nutmeg & brown sugar... instead of the white sugar...raisins... other nuts & cardamom... Although I am surprised to see recipes for the fake "carrot bacon"...carrots made to look like bacon!!

You won't know till you eat it. If you've already had gajar ka halwa then try this version. Make half the recipe if you are not sure and I promise you'll be amazed.
