Since you know something about Indian food and the variety by region….here is an idea.. a little out there but nonetheless…a strip mall or even a section in a regular mall with different restaurants based on different regions.. kerala..Konkani..Punjabi..gujurathi…maharashtrian..Tamil nadu…7-8such restaurants in one place….maybe it’s a Vegas concept…

you have to remember the market for your product- pretty sure you do. You can recreate the tradition but your customers are ignorant and in a different world. Reaching out to them so they understand what they are offered is something a traditional vendor in India does not have to worry about. It's difficult even with pictures because the look often does not let you discriminate between different tastes so perhaps similar looking menu items are to be avoided? I'm usually happy to eat what i'm told and experiment but many are not.
