Indian Restaurant Style Pilau Rice

Indian restaurant-style pilau rice, with a mild aromatic flavour, only takes 5 minutes longer to make than regular boiled rice. Pep up that homemade curry with this easy recipe for vibrant yellow pilau rice.

Ingredients:
1 tsp vegetable oil
2 tsp unsalted butter
1 small onion - peeled and finely diced
1/2 tsp cumin seeds
6 cardamom pods
6 cloves
2 tsp turmeric
2 bay leaves
300 g Basmati or long grain rice
600 ml boiling water
Method:
1. Heat the oil and butter in a pan until the butter melts. Add the onion and cook on medium heat for 5 minutes until softened.
2. Add in the cumin seeds, cardamom pods, cloves, turmeric and bay leaves.
3. Heat through, whilst stirring for a further minute.
4. Add the rice and stir to coat in the spices.
5. Add the boiling water, stir once and bring back to the boil, then place a lid on the pan and turn the heat down to very low (I use the lowest heat if cooking on gas, or setting 5 (of 10) for induction). Cook for 20 minutes.
6. Once cooked, turn the heat off. Leave the lid for a few minutes, then remove the lid, fluff the rice using a fork and serve. You can discard the cardamom and bay leaves.
Tip: If you don’t remove the lid after cooking, the rice should retain its heat for 20-30 minutes.

Thanks for this recipe! I made this rice recently along with a homemade beef curry, and it was delicious. My mother- and father-in-law had it as well; they said it was so good that they didn't need any other sundries to accompany it!

Basmati rice should always be thoroughly washed 4 or 5 times to remove starch and then soaked for at least 30 minutes, to slightly soften the grains, before cooking.

@@johnhowley6885 I find soaking the grains allows them to absorb some water and reduces the cooking time which, in turn, better preserves the flavour of the rice.

Made it to go with a moghlai chicken curry and it was top drawer. Only difference was I added some fennel seeds for an extra dimension.Thank you for uploading.

I always cook it for 10 then take it off the heat with the lid still on to steam and absorb water for another 10. Always perfect.

If I may be so bold as to add one comment Nicky. You should wash the rice, then soak the in cold water for about 20 minutes, Then drain it before adding to the pan.

We lived in Karachi and the only trouble I have as a foodie is replicating the wonderful Indian food without a LOT of time standing at the counter putting ingredients together. This is a quick and easy solution for the oft overlooked mistaken as a side dish. Thank you!

Hi Nicky, I’ve made your Pilau rice recipe before and it came out great. Fluffy and comforting. Can I ask, where do you purchase your bay leaf from? I’ve been looking for the exact ones you have, as the Sainsbury’s ones are really small and often broken, and not as fragrant. I’m based in London. Thanks.

@@were_all_fact6026 Hi! Try asian grocery stores / supermarkets to buy authentic spices and other bits.. it's where I buy my spices, bay leaves, cinnamon sticks, etc from. There should be several in London, of course depending on where you live. I agree that the sainsbury's ones are small, and not as flavourful, but they're what I bought when I first started cooking more seriously too! Hope that helps :)

I messed up with this. I cooked the rice in rice cooker then once cooled added to the rest of the ingredients minus the water in a saucepan. Could this all be done in a rice cooker?

I made this today and it came out looking exactly like yours the only problem is it had no flavor aside from the spices it was plain. No saltiness at all. Did I do something wrong?

Just add a teaspoon of salt when you add the water to the rice to cook, give it a stir and follow the rest of the cooking recipe

I know you made this video a while ago, but I just cooked your recipe tonight with a Chickpea Coconut Curry and it paired great with it!! I have High Blood Pressure, so it was alright that your recipe didn’t call for salt since I have to lower my sodium intake anyway. Your steps were easy to follow and the ingredients weren’t hard to find. The only change that I made was to wash the rice and let it soak for 30 minutes. Overall, I think this is a great introduction to cooking Indian Rice Dishes since others require more steps and ingredients. It has definitely given me the courage to try more advanced recipes, thank you!!!

Rice looks sticky its important to ensure rice is washed many times to remove the starch or you end up with rice like this looking sticky.

Made this a moment ago…am I crazy or did this recipe lack any mention of salt? Without salt, I can tell you this was a big waste of money and time. And don’t anyone tell me it should have been obvious…like I haven’t heard that before!😂

Washing the rice gets rid of the extra starch. Washing and soaking the rice and make the rice grains grow much longer.

I think rice has to be washed if you’re cooking it in a huge pot of water rather than this which is the absorption method. I’m surprised she didn’t add any salt. I would be amazed if it doesn’t need it.

Nope nope nope…maybe rice but definitely not Indian!Indian food is very labor intensive and usually westerners like to water down the recipe so much that there is absolutely nothing Indian left in it.

Well I do understand where you're coming from this is clearly over simplified India is a very large subcontinent with many different styles of food and beyond that you don't think that there are any dishes that are just the oh God I have no time I need to EAT dishes come on man. Yes there are definitely labor-intensive dishes Galore in India but there are also plenty of examples of simple ones Moong Dal, Chana Masala, Aloo gobi,Naan. All relatively simple authentic indian dishes.

Definately NOT the way to do it !! Far too much Turmeric (half a teaspoon at the most) needs salt and definately ONLY USE BASMATI RICE. Whats wrong with using a cinnamon stick ?
