It’s just a particular style of pizza. This is probably a regional style that doesn’t use a sauce.

Looking at the size of these, sauce would just make them soggy and unpleasant. Secondly, a lot of the ingredients are already wet or have juices and oils in them that will expell when heated, including the cheese and pears. Plus, tomatoes are not native to Italy, so this would have been the traditional way of making pizzas.
