This is just lovely, Marion. Please ignore some of the comments coming from my fellow Indonesians trying to tell you how to do things. The truth is, there are myriad variations of soto in Indonesia. It's a big country, and most of us just don't travel enough to know enough about our own cuisine. To my fellow Indonesians, this recipe might not be familiar for some of you but you better believe that in some places this is the standard. Coconut milk is a must have for some of us and spring onion is not that uncommom either, it really does add to the aroma. And chopsticks are really handy, I even use them to eat chiki and pisgor, sue me. God, demen banget sih ngatur hidup orang 🙄

That’s typical Indonesian, when foreigners cook Indonesian food and do not use the authentic ingredients, they start piping up and write comments about how to do it “properly”, BUT when it comes to cooking foreign food, look at what they do, Tiramisu kukus, Cappuccino cincau,.. what would the Italians think i wonder..

My mother used to make this Soto, but the light version. It doesn't contain coconut milk at all and no cumin, but my mother add some candle nut. And for the topping we usually put fine chopped celery and fried shallots instead of coriander leaves. You should try it out, it's so light and refreshing. For browning the chicken it's a good idea tho. Thanks for sharing your version Marion. Love from Indonesia 🇮🇩

Actually there are tons of variation of "soto" soup in Indonesia. It varies mainly based on the region/city or ingredients. Usually the soto ayam (chicken soup) version doesn't require coconut milk and the broth is clear. For the garnish you can do more by adding cracker/krupuk, fried shallot, a half of boiled egg, Indonesian sweet soy sauce (kecap manis) and my favorite perkedel kentang (fried mashed potato). Anyway thank you for introducing Indonesian food and please explore since we still have iconic dishes such as rendang, rawon, satay, gado gado, bakso, perkedel, rempeyek, ayam taliwang, etc. Good luck!

as an indonesian (specifically i am balinese), i prefer to mix the seasoning with coconut oil as it helps to enhance the flavor when i fry them. there is nothing wrong or bad to use the broth to help the blending process but i often felt the seasoning was lacking by using water, as if the soto were just disappears on my tongue as soon i swallow it. but when i use oil (whatever you choose to use, in indonesia we usually using coconut oli most of the time), the taste lingers and making me aware of how delicious the dish is, makes me wanted to eat more. anyway it is just my opinion and everybody had their own taste

Hi Marion, I'm your biggest fan from Indonesia who's now living in USA🇺🇸. I love watching your video and I hope you cook more of Indonesian food since all your videos are very creative! You're my true idol -> successful tv presenter, cookbook author, and food journalist. And most important you're always calm and collected on every video you make, very inspiring! ❤️❤️❤️ Anyway, Indonesian cuisine varies greatly by region and has many different influences. Techniques and ingredients were influenced by India, the Middle East, China, and finally Europe. Indonesian cuisine often demonstrates complex flavour, acquired from certain ingredients and bumbu spices mixture as savory, hot and spicy, and also combination of basic tastes such as sweet, salty, sour and bitter. Most of Indonesians favour hot and spicy food (sambal) with shrimp paste, is a staple condiment at all Indonesian tables. Seven main Indonesian cooking methods are frying, grilling, roasting, dry roasting, sautéing, boiling and steaming. Thank you for recognizing one of delicious food from Indonesia 🇮🇩!

Marion.. I love everything about your soto. Do not mind people commenting about coconut milk in your soto. Soto has a huge number of variations across Indonesia with different ingredients and people still call them all soto (or coto in Makassar) and you can put anything you wish into it and make it your signature soto. Coconut milk in soto is heaven in the palate because I prefer thick and spice-full soup to the clear and light soup. If you are still wondering about other variations of soto, you might want to try Soto Sokaraja (soto with peanut sauce), Soto Betawi (this one is with coconut milk or milk!), or Soto Tauto Pekalongan (you might find the fermented soybean in Chinese grocery stores - well, it's too complicated tho).

If you wonder how many versions of Soto, ill list some which i know. Talking which soto is right can be very confusing. Soto ayam (chicken based) : Soto Medan, Betawi, Solo, Jombang, Lamongan, Surabaya, Banjar, Kudus, Banjarmasin. Beef based : Soto madura (from Sumenep), Soto Solo (beef), Soto Dhok Jombang (Beef), Coto Makassar. Fish based : Soto madura (Sepulu) So many comments about coconut milk usage, so from above list, ill write which one using coconut milk : Soto Medan, Betawi, Kudus, Banjar, Surabaya. Soto ayam Surabaya is kinda confusing, it is not the most soto consumed at the city name it based from. It kinda only available at outskirts of the city. Not only it has coconut milk, but srundeng. Surabaya people usually eat Soto Lamongan. With a lot of Koya. Lamongan is a town near to Surabaya. Also confusing is the Soto Madura or many people refer as Soto daging (Beef Soto literally). It may not originated from Madura because my mom live there and told me they only had the Fish version, with reddish colored soup. Edit : Input from Muhammad Safril. The Soto Daging, the beef version of Soto Madura was from Sumenep. But whatever version the soto is, one thing is the same. You can custom order the ingredients. So you can tell the cook which one you like and you dont. You dont like celery? fine. You want extra chicken breast? No citrus? No glass noodle? Just tell the cook. As long you don't say "without soto". If you know more than i do, put your comments down below 😋.

If you added coconut milk it will be Gulai, not soto in indonesia. Soto Ayam usually didnt use coconut milk

this might be weird, but most of Indonesian restaurants across NSW and VIC serve this KIND of soto ayam. Turmeric chicken broth mixed with coconut milk. I was mad initially, but then, got along with it after living 2 yrs in NSW. Hence, i call this AUSTRALIAN SOTO AYAM!

when you took to use coconut milk for that chicken soup, i thought you was being made 'opor ayam' or yellow chicken soup, mam... i am sorry before for my comment. i am just knowing soto ayam' making without coconut milk. But i don't know if any another soto dish version.

@yitna wulan. justru itu. marion tidak menyebutkan, dia sedang buat soto indonesia versi mana ? karena soto santan indonesia byk versi sesuai asal daerah. ini yg bikin gw bisa salah persepsi. kalo marion bilang sdg buat soto santan khas kudus, tentu gw gak akan mengkritik. mmg soto kudus, berbahan ayam kampung dg kuah santan bewarna kuning.
@milinkanov4422
@milinkanov4422 4 года назад

You may use any ingredients you want for your version of soto, but cilantro/coriander leaves is a big no no. It will ruin the taste of soto. Asian celery tastes a lot different from cilantro. Your soto looks great btw 😊👍

Why make broth and use deboned chicken.. You want flavour from the bones..
@riel5197
@riel5197 4 года назад
you mean why make broth "with" deboned chicken? that's because 1) convenience : supermarket's chickens sold already deboned, and people would rather eat something bone-free. 2) because this one make use of coconut milk and thick herb paste, so the extra effort of getting a pile of chicken bones and boiling them along with other stuff and then fish them out might not really worth it. unless you are making clear broth type of soto or mie ayam.
@abdrahimn
@abdrahimn 4 года назад
@@riel5197 bone-in chicken is as easily available as deboned chicken. It's a missed opportunity to intensify flavour. But hey.. You do you.

that's why you don't "slurp" soto. and you should have use spoon only. eat the noodles/rice vermicelli(bihun)/glass noodles(soun) along with the soup. chopsticks and slurping are not part of the culture.
@rafi4821
@rafi4821 4 года назад
Talking about culture, well actually the best way to eat any foods is having it the way what best suits for their own preferences. Like Japanese for example, they eat steak with rice (omg) using chopsticks, sometimes they eat pasta with chopsticks too, because thats the best way they think to eat it, same goes to Indonesians, they use spoon because thats the best way they think to eat soto (or soupy dish in general). Like me, i eat ramen with spoon because i found that it more pleasurable to eat it that way (as an Indonesian or at least for me)instead of slurping with chopsticks. And im sure that she did ate the original ver of soto and used spoon before she made “her version”
@riel5197
@riel5197 4 года назад
unless she's been to Indonesia and having soto here, where people normally won't give you chopsticks to eat Indonesian dish, i highly doubt that. and i think it is more important to show that you are aware of the culture. you can do it however you like "off camera". because there are A LOT of people East-Asiansplaining Indonesian Culture. Eating Nasi Goreng with chopsticks, slurping Mie Goreng and stuff. and it is painful to watch when they are struggling with the dish. like rice falling off everywhere, get choked because of thick spices etc. because they purposely doing it with different(wrong) culture. what i'm saying is just follow the culture, suits better for the job, you'll earn respect and it's not hard at all. cheers.

Riel Dasparion respect to this reply, but i wonder why you referring me by saying “you” to me, instead of “her” or “she”? As we talking about her not me.... I’ll be much appreciate your reply if you “teach” to the right person, and avoid misunderstanding ofc.
@riel5197
@riel5197 4 года назад
@@rafi4821 This is English, not Bahasa Indonesia. Explaining with "you" as object is common practice. Q: Can you use Bahasa Indonesia's grammar in an English sentence? A: No, you can't. ^ serves both example and explanation.
@rafi4821
@rafi4821 4 года назад
Riel Dasparion that has nothing to do with the grammar, your explanation will be fit if there’s only you and me or teacher and student (2 way communications) without talking another subject or object, for instance, “Can you do it?” Is different to “Can she do it?”
