Maybe tha ambient temperature could be to high because of the proximity to the charcoal. Unlike the probe in the lid of the gril, that has some distance to it.

The discrepancy in the distance could be because your phone is connected to the case, and the case is connected to the thermometer. So, I think that if you have the case farther away from the thermometer you could get more distance, but won't necessarily get you to 300ft.

Ther temp over the heat will be a lot hotter than the 500. If you are searing the meat, take out the probe. your house heater comes out the vent @ 90 degrees, but the house is 68 degrees.
