Philippine Adobo is actually a pre-colonial dish, when the Spaniards first saw it, they saw that it was marinated, hence why they referred to it as (Adobo de los Naturales) which means "Adobo of the Natives". Eventually the term "Adobo" supplanted the original name of the dish, which is Kilaw/Kilao.
Thanks Marice! The Filipino people are undoubtedly the best I have met so far in this part of the world. It truly feels like family every time I’m here

2:35 Adobo and adobado are not actually synonyms. Adobo is a noun, usually referring to a soy-vinegar-garlic dish of chicken, pork or both. Adobado is an adjective, and you can attach it to a noun to suggest that the food referred to by the noun is prepared in an adobo-like way. So beef is not commonly cooked as adobo, but when it is, you can call it "adobadong baka" or adobo-style beef.
Awesome, thanks for not only the culinary lesson, but also grammar! What I *do* know is that this wagyu version is the best that I have tasted ANYWHERE in PH... absolutely amazing!!
Hey Jonas, thank you so much for watching the video and taking time to subscribe and introduce yourself. I look forward to sharing my onwards adventures with you in the coming months!
I agree - it’s a long way from the street food Monday to Friday. Then again, it is in the expensive neighbourhood, so not encroaching on say Malate or more ‘local’ places

It’s a strange name isn’t it!? The people who have run the stand explain that it is called ‘dirty ice cream’, and why it is known as that… ironically though it’s really clean!
