So-I've learned that Americans call biscuits _cookies_ and dumpling mix comes pre-packed in _biscuits_ ... is that right? Here in (the original) Norfolk, in eastern England, we make traditional Norfolk Dumplings for stews etc. from flour, baking powder or yeast, salt and water. These are 'swimmers'. Add shredded suet and you get 'sinkers'. Suet is hard fat from around a cow's kidneys, btw. I've never seen pre-packed dumpling mix in the UK, but I enjoy making them anyway.
You are correct, our cookies are what you call biscuits. Our biscuits are a type of bread or roll. We make dumplings by basically boiling the dough for the biscuits. :) You can make your own dough with a few simple ingredients, or you can buy them ready to cook as I do in this recipe.
