Recipe Here!: pressureluckcoo...
Okay. ALRIGHT. I caved. You've all been asking for me to make a yogurt video so I FINALLY did it.
But I figured if I'm gonna make a yogurt video, it's gotta be done to show how you can do it TWO WAYS: Regular (unstrained & creamy) and Greek (strained & thick)! And no having to pre-boil any milk and buy a candy thermometer here - we're doing this the best and easiest way: the cold start method.
And honestly guys, I'm not sure why I waited so long. It's THE EASIEST THING EVER, absolutely amazing AND WAY CHEAPER than buying it in the store! This is literally one of the most amazing features your DUO or Ultra Instant Pots have!
*NOTE: Frieda Franchina claims to have coined the phrase "Cold Start". So I will credit her on the name of that method.

I use normal pasturised milk (no boil) and it works wonderfully!!! Lasts for up to 4 weeks in the fridge! Also.......strained it makes the best creamy yogurt cheese ever. Just line a square container with cheesecloth pour in the strained creamy goodness to the rim, fold the cloth closed, pop the lid on and let it sit in the fridge for 5-7 days!!! No need to buy cream cheese anymore.....this stuff is awesome!!!

My mom had been battling a post operative infection. I made your Greek Yogurt (fantastic BTW) and since her doctor said my mom should really up her intake of protein for wound healing, I gave her the whey from my straining of my yogurt. She is doing really great now her infection is almost gone and her wound is healing nicely. She uses the whey in her smoothies every morning. And, she loves the yogurt too. She say's it's the best she has ever had. Thanks, Jeff!!

I make yogurt once a week - although I personally do the 'boil method' - sterilizing the pot, bringing the milk up to boil, cooling, then adding the yogurt starter, incubate for 10 hours, chill undisturbed for 6, strain (same strainer) for about 3 hours. It's a longer process by a few hours, but so worth it. Fairlife milk is $$$. And out of each batch of non-sweetened yogurt, I freeze my own 1 TBSP starter cubes and keep those in a container in the freezer. I haven't bought yogurt in 2 years!

Karen Lombardi / reg milk is better then fair life. It’s almost $4 for 1/2 gallon. I’ve recently tried it and it’s not as good as the traditional way. The whey doesn’t even come out yellow with fair life. I keep the whey and use it as my starter. Fair life also needs to sit for 12 hours to get the tangy Greek flavor. I also used the condensed milk in it. Wasn’t a fan. To each his own.
@WillYllera
@WillYllera 6 лет назад
At what point do you freeze the 2-3 tablespoon? Like right after the instapot incubates 8-10hrs or after you strain and leave it in the refrigerator for a few hour?
@karenlombardi8242
@karenlombardi8242 6 лет назад
When it's completely strained to my liking, I transfer it all into a designated yogurt container - THEN I pull my Tablespoons to freeze. After they freeze, I pop them into zip bags and into a sealed container. I thaw them out in a measuring cup that I set into a dish of warm water while I get my yogurt started. Don't microwave it!
@karenlombardi8242
@karenlombardi8242 6 лет назад
I've never even tried Fairlife ... because all they have at my market is Chocolate anyway! I never thought of using the whey for starter ... I'll give that a try too! And I'm with you about the sweet ... I like it plain, with honey and fruit, I've used flavored syrups for a changeup, use it on potatoes, and my famous banana bread :)
@TLJTHELITTLEJUICE
@TLJTHELITTLEJUICE 6 лет назад
Karen Lombardi why waste your actual edible yogurt when you can use the whey? Whey stays in the fridge for 6 months or you can freeze it. Most people dump the whey but it’s good for smoothies, gardening, making breads. You don’t need to waste any of the milk when making yogurt. I’d never buy yogurt again. I’m single and I make it 2 times a week. I also make Kiefer. It has 3 times The probiotics then yogurt and it’s easier. It’s a little weird at first with the separation but no tools needed. Just the grains. No cooking, it just sits and it’s sooooo healthy. The amazing things God provided us naturally for cents. ✨🙏✨

If you invert the strainer on the inside of the lid( minus the bottom container) it will pop out like a Jell-O mold. If you keep the whey and add berries or bananas or what ever, it makes a great health smoothie!

Got the strainer you mentioned, thank you. I prefer whole milk but would rather have milk direct from the source because it tastes better than homogenized pasteurized stuff from the stores. In the dark of the morning before breakfast in the sub zero weather I'd trudge cup the road to the barns and find the milk cow waiting to enter the milking parlour. I'd pout some feed in her manger, clean her udder band tie her tail down to keep from being swatted as stuff thawed, sitting on an one legged stool I'd begin milking. The feral barn cats would line up along the wall behind the cow waiting to be squirted with milk. I'd usually fill 2 pails. I'd bury forehead in her flank where it was nice and warm. I'd lug the full pails back to the houseman taking them to a cold room where there was a large tank with a conical bottom and a glass tube on the side of it with a spigot on the bottom. The cream would float to the top so that the milk could poured off. What was not drunk or used for cooking was fed to the chickens and slopped to the pig. Cream was used for tea and grandma's coffee and churned. It was also sold to the local creamery along with eggs that were candled before taken to town. All of our cattle were tested by a vet so there was little danger of disease. All of the milking was done before and after the schoolbus. In the winter I never saw my home in daylight but we could see the Aurora Borealis.

Gene Park I remember that cold milk as it ran over the ice thing into a milk can . So cold ,sooo delicious. My mom didn’t have a butter churn, so she used a clean mason jar, and the butter was soo good on fresh baked bread. Better then cake 🍰 . My dad worked on dairy’s back in the 1940’s .my happiest memories were in those times ,playing in the alfalfa fields ,and the wonderful smell of the alfalfa freshly cut. And also the cats and kittens Waiting for the squirt of milk, me too ! And the sweet taste of the bran right out of the “gunnysack “ ! Even though the world was in turmoil ,a child has sunshiny days and peaceful nights ,if they are lucky ,I was lucky ! I been making yogurt for 6 years and havent bought a starter since. a new gallon of milk after heating to 185 degrees then i cool it down to115 degree add a quarter cup of my yogurt stir in put in insta pot with loose lid on venting. Turn on yogurt setting and push 12 hours. Then I put it in colander with coffee filters and let it drain two hours in pan underneath. Perfect thick yogurt every time.

I bought an Instant Pot three weeks ago, and made yogurt in it using full-fat milk. Just put it on the Yogurt setting on High, and it will boil the milk for you to 180 F. Then remove the bowl to a cold ice bath and stir until it reaches 110 F. Then stir in your culture starter yogurt, and put the pot back into the Instant Pot. Hit Yogurt button again, but this time on the Normal setting. Set the time for 8 to 10 hours, and it works perfectly ❤

Quelle presque disastre! Last batch of yogurt only became soupy after 8 hours on the yogurt setting . I'd used the last of the last batch as culture. Remembered the creme fraiche I'd made. Added 2 heaping spoonfuls to the thin yogurt and whisked nit in. Restarted the yogurt and set it for 10 hours. After letting it 'cook' for 4 hours I took a peek. Et voila! it had set. Poured it into the strainer and into the fridge. This afternoon, perfect Greek yogurt with fantastic flavour. I've become addicted to it, especially mixes with Tasters Choice coffee crystals, sweetener and vanilla extract. Got to get another cup of it.

Pardon my ignorance - but my husband is the coffee drinker, not me! So when you add the coffee crystals (same as instant coffee?), sweetenter, and vanilla - is it a spoonable concoction or do you make it to drink? He likes yogurt and I think would welcome something coffee-flavored. What say? Thanks in advance...

I bought my Instant Pot specifically to make yogurt and have been very happy with the results (except for the time my cultures died). I’ve been using the slightly more complex method of scalding the milk first (which requires a thermometer). Now I’m wondering if I should just do the cold start method. Is the ultra pasteurized milk essential because it is not scalded? If not scalding the milk I would definitely sterilize the pot first. I agree with buying the EuroCuisine strainer. So much tidier than coffee filters! I happen to prefer Greek style yogurt and since I am trying to be healthy, I don’t add any sweeteners.

Scalding is to denature proteins to avoid curds, maybe not scalding helps for greek style.

To question 1 yes, it just needs to have active cultures.

Sounds easy. I’m gonna have to try that. We love yogurt and eat it all the time. Thanks for sharing. And yogurt is getting expensive.

Great video, I got a couple of different things from it we always have here sweetened condensed milk to make flan. I also enjoyed seeing that yogurt strainer I'm going to get one of those I can also use that for when I make my pot cheese that is a cheese that is in between Cottage cheese and farmers cheese you could use it for desserts for regular dinner dishes, my favorite macaroni and pot cheese. Happy New Year!

I make yogurt every week in my instant pot. I strain mine. I make smoothies, yogurt sauces such tzatziki sauce. For lactose intolerant people straining eliminates much of the lactose.

I make yogurt all the time but I use the boiling method. I never strain it. It's always thick. I use milk, powdered milk and 2 T Fage yogurt. I make 1/2 gallon at time. I keep it in a Mason jar in the refrigerator and it lasts over a month without rotting. Love it so.

Risa's Kluttered Kitchen same here. I use nestle Nido powdered milk or Peak with regular milk. Just a quarter or half cup.

Charles Byrne I just use ShopRite store brand 2 tbsp for 1/2 gallon. One of the only things I use it for.

You will probably never see this. To make my greek yogurt sweeter, can I add monk fruit or stevia while it is incubating?
@ccmnevada
@ccmnevada 3 года назад
I have read That if you want to sweeten your yogurt you should do it after it’s made just before eating. But if you put sugar in the milk while it is incubating that the sugar will kill off all the good bacteria.

Hi Jeff, and thank you! I made the regular yogurt this way last night. Divine. Maybe too good! I'll certainly never buy it at the store again. Love your videos.

Good video, and both yogurts looks delicious. When I was in Greece I bought a yogurt thinking it would be like most of the American tangy yogurts I have tasted, but the Greek yogurt was super thick and NO tangy flavor. It was the most delicious yogurt I have ever tasted. The many Greek style yogurts I have since then tasted in America don’t taste anything like the yogurt I tasted in Greece. Greek yogurts in America aren’t as delicious as the yogurt I had while vacationing In Greece. Hopefully, when I make Greek style yogurt at home it will taste as delicious as the Greek yogurt in Greece. 👍

You don't have to have this strainer. Get some tea towels or cheese cloth and put it over your regular strainer and it works perfectly. You can get a 4 pack of tea or flour sack towels for less than $2 at Wal-Mart or target.

May I ask a question please? If you choose to use the sweetened condensed milk, can you still strain it and make it Greek?

Hi,just found your video and it's amazing I just have a tiny question about the creamy yogurt, after it cooks do you have to keep it in the pot covered in foil or can it be transferred in a smaller container then rest in the fridge? Thank you in advance

I bought the Euro Strainer thingie. It is very hard to wash clean. I actually ripped one section while washing after the third or fourth time using it. I have had better luck using coffee filters. I line a large plastic strainer with industrial sized coffee filters that I got on Amazon. I use them in sets of two. It takes about 10 or 12 in all. They actually do a better job of straining off the whey than the expensive strainer.

I whip my greek yogurt yogurt staining so it smooth as silk. I cure mine for 16 to 18 hours, i like it tangy.

Hello, can yogurt starter be stored in the freezer? I was thinking about putting two tbsp of starter in tiny containers and storing in the freezer so I always have it. That way if I don't want to make yogurt within two weeks I don't have to buy a whole container of starter yogurt. PS Fairlife milk is now available in Canada. Thank you for the wonderful videos!

If your Instant pot has a yogurt program, it has an automatic boil to bring the milk to temp, then cool to 110, or warmer on the wrist.

As a Canadian I thank you for the tip about using Natrel milk if we can’t get fairlife. Now, another question; our Condensed milk is , of course, metric and is in 300 ml cans. This not the 14 oz that your recipe calls for. Do I need to open a second can or just work with one and a little less sweetness? There is about a 100 ml difference, I think. Thanks

I made the regular Yogurt...and I have to say!!!!... Oh My Goodness!!!! Super good and Sweet...I am assuming I can use a 1/2 can of the sweetened condensed milk...Its almost too sweet once I add Huckleberry preserves....but even still .... the kids are sure to like it!. So yummy! ... Not at all like Yoplait or Tillamook..but more like "Peak" Brand...SOGOOD!!!! Thank you for sharing!

Also...the rubber gasket in the lid...is NOT needed when making yogurt since it is NOT under pressure...take it out to make sure you don't get "other foods" previously cooked taste in your yummy yogurt. I have read where you should purchase an additional gasket...one for your savory foods...one for your sweet foods...but Yogurt..the gasket isn't needed AT ALL....so don't go buy one if this was your plan

Wow. I have become lactose intolerant so i thought i had to give up my Greek yogurt. Ive always made my yogurt in a 2 quart pyrex cup in the microwave to 185° then let it cool to 110° then just put the pyrex cup in my oven set at 110° overnight. I have not wanted to have my IP in use for that long but now i know that Fairlife i can eat/drink and i did not know it didn’t have to take it up to 185°. Hmmm thanks Jeff good news thanks. I think ill continue to use my microwave oven and just heat it to 110° then add my culture and put it in my wall oven at 110° overnight or longer. Yippee glad to be able to have my greek yogurt again.

Jeff I love all your videos!! Love my IP and love yogurt so I can’t wait to make it just like you showed us. Not sure about the sweetened condensed milk as I’m trying to avoid sugar so what about adding Stevia drops instead? Thank you so much. You’ve taught me everything I needed to know about using my IP. And, all your recipes are the best. 😍

Thank you for the video, I just got my Ultra Duo, 6QT today and once it's done with the water test I'm making this yogurt. I have the Light Free Fairlife Milk instead of the Whole Milk but eh. Looking forward to having some of this yogurt tomorrow morning. No plans in cooking in the IP today besides yogurt so I'll be doing that.
