The Fastcap accelerator is actually something called N,N-dimethyl-p-toluidine in an acetone carrier. Without the accelerator, the glue goes off because of the presence of hydroxl ions in the moisture on the surfaces and surrounding air. Baking soda increases the amount of these ions when dissolved. Apparently, N,N-dimethyl-p-toluidine does something different (although this is beyond our seventh-form chemistry understanding!) We've played with different formulations and have found that water by itself does next to nothing; baking soda is OK (but can go cloudy) and does make a good filler at the cost of some bond strength, whereas the official accelerator is by far the fastest and has minimal whitening etc.
