Yes you can use any field in the DE for lookup matching - even email address. If it is a unique identifier then you should get a single row and the corresponding field from it. However if it is not unique then you may get multiple rows and you wont be able to exactly point out the row from which the field is retrieved. If email is unique then you should be able to use that as well.
