Hi friends, today we are making one of my favorite vegan dishes I call Iranian Vegetable Stew or Persian Vegetable Stew (Khoresht O Giahee).
This is a one-pot dish & you can of course substitute any of the ingredients for things you prefer.
This is served with bread, or over rice and you can have it anytime. If you make it, please let me know how it turned out!

Ingredients List:
• 2 Eggplant
• 4 Tomatoes
• A few Bell Pepper
• 1 Onion
• 4 Cloves of Garlic
• 1 can of Pinto Beans (add more if you wish)
• 1/2 Teaspoon Red Pepper
• 1/2 Teaspoon Black Pepper
• 1/2 Teaspoon Cumin
• 1/2 Teaspoon Curry Powder
• 1 Teaspoon Paprika
• 1 Teaspoon Salt
• 1 1/2 Tablespoon Tomato Paste
• Cooking Oil
• Parsley for Garnishment
