Continue the holiday season with a festive treat - our irresistible holiday spice cake. Quick, delicious and simple! This delightful confection brings together warm spices, tender crumb, and a citrusy glaze, making it the perfect addition to your holiday table.
Ingredients:
4 eggs
200 g sugar
200 g butter
100 g natural yogurt
1,5 tbsp. baking spice mix
1 tsp. baking powder
1 tbsp. cocoa powder
200 g flour
100 g candied fruit
For the glaze:
150 g powdered sugar
30 ml lemon juice
The steps are:
Preheat the oven to 180°C (356°F), grease a 20 cm (8 inch) diameter round cake tin.
In a large bowl, whisk the eggs and sugar until lightly foamy.
Add the melted butter and whisk again until smooth.
Add the yogurt and stir to combine.
Add the baking spice mix, baking powder, and cocoa powder and whisk until well incorporated.
Gradually add the flour and whisk until you have a smooth batter.
Add the candied fruit. Stir until smooth.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Let the cake cool completely in the mold on a wire rack.
To make the glaze, whisk the powdered sugar and lemon juice in a small bowl until smooth and runny. You can adjust the consistency by adding more powdered sugar or lemon juice as needed.
Once the cake is cooled, drizzle the glaze over the top. Sprinkle the glaze with candied fruit.
Enjoy your spice cake with a cup of tea or coffee, or serve it with whipped cream or ice cream for a decadent dessert.
