This one-pan roast leg of lamb is the easiest way to make a full roast dinner, using only one roasting tin. We add the veggies in at different times, to ensure everything is finished at the same time. The vegetables are roasted in the oil and the meat juices, so they taste divine!
This is one of the recipes from my book, Its all about dinner.

This is brilliant and it is all there ready on time with just one large oven dish, no boiling or any other method to use. We don`t have turkey for Christmas but we love lamb and using this method makes a terrific dinner, it doesn't matter if the pigs in blankets or other accompaniments are done separately, most of the work is already done. Thank you.

My Mum was a butcher and I used to have all sorts of beautiful cuts of meat growing up as my Mum could buy larger portions and butcher them correctly. Now I'm older I hardly have Lamb anymore as I feel the price has absolutely skyrocketed, plus I can't save money on meat like my Mum did! This looks absolutely lovely, I might try with a smaller cut of meat as I'd only be cooking for me and my boyfriend. Maybe shoulder?

Shoulder of lamb is sooo much tastier than leg but I don’t think any cheaper…good luck anyway 👍🇬🇧

Hmmm - how to keep the veggies warm, while the lamb is resting?

The next time you cook a pot roast cut up a turnip in bite-size pieces the gravy tastes so good.

I can relate. My husband prefers roast chicken over lamb whereas I can have either. I love roast lamb as well.

If you're the cook, just cook it and if they don't like it they can make a peanut butter sandwich . Catering to other peoples nitpicks is one thing but you have to cook for yourself as well. If you're not the cook, you better start learning.

A great video and recipe but that lamb didn't come out of Tesco, Aldi or Lidl. I haven't seen lamb like that since every high street had a proper butchers. That isn't a criticism btw, Nicky. It's just that a piece of lamb like that is beyond most peoples reach. Supermarket meat is now devoid of natural fat which was half of the flavour - especially when it comes to making roasties. The flavoursome fatty rind on steaks has also disappeared from supermarkets. Where is all the natural fat going? WE WANT OUR FAT BACK !

This is NOT an advert for Aldi...but we had a leg of lamb from there two weeks ago and it was delicious and tender. Of course, I followed a YT video to figure out how to cook the leg, as I am an ordinary fella.

ABSOLUTELY AGREE 👍 about the fat it’s ALL cut off cuts of meat now leaving the meat tastless, you know the old saying “No fat no flavour “ well it’s Sooo TRUE

@@Sar_ahJexactly!! They would take closer to 2hrs at 400f. Even if these were par boiled they still wouldn’t be cooked properly.

no resting for the lamb? Presumably it would be better to take the lamb out to rest for 20-30mins before the end and let the veg carry on cooking?

The potatoes needed to have gone in with the lamb - I can't see how any of those vegetables would have been cooked.

That silly oven makes me laugh - because you have to open then slide the door underneath, all the heat comes out. Hysterical - obviously invented by a man!!! Dish looks delicious, as always.

A bit disappointed with this recipe! Honestly think there’s only one way to do a proper roast. If you’re lazy enough to do it this way just because of the amount of pans, then go to a carvery!! Nikki you cook well but this is a shocker 🤦🏼‍♀️
