Here in Taytay Rizal, my friend from Bicol made a food business during pandemic with pancit bato on the menu and it's so goooood! Lalo na kapag nilagyan ng suka(vinegar). Bicol dishes are very delicious and unique. I hope more of these dishes get a spot light on your videos.
Nanay ko was born and raised in Bato. The original pancit-maker was just a walking distance from their ancestral house. My favorite is dried ginisa with malapot na dinuguan plus sinapot.
Was waiting for this episode. Showcasing my mom's roots. My Mom used to cook this with sardines and lots of pechay. Typically we put spiced vinegar. The best! Wishing we have pancit bato here in where i migrated.

We Bicolanos eat pancit bato almost on a regular basis. It's something you cook when your household can't decide what to cook for lunch/dinner. It's also traditional "handa" during Holy Week (Bicolanos are still quite religious) when people can't eat meat, we usually mixed pancit with shrimps or any seafood/veggies for that matter.
i would 💯 agree with ths. our fam cooks pansit bato when we can't decide (and/or when we are too lazy to cook haha lol) what to eat during dinner. hahaha!

Sounds fascinating especially all the different toppings, though I’m not a fan of pigs blood but pig face yes. Sisig Pancit sounds so freaking amazing. 🤤 I am gluten intolerant so I will have to use bihon or pad thai/Vietnamese pho noodles but I’m excited to try the other versions. Parang mas maganda yung maliliit na noodles. Pwede mo kasi i undercook yun ng konti, para matigas tigas at chewy. Di tulad ng malalaking noodles, parang miki texture na yata siya.
A original na luto kan ginisang bawang sibuyas (lana)paminta saka toyo amo na..bakal sa rinuguan o egado..white rice..yan ang best ko with white rice..
Both of my parents spent a lot of their childhood in Bicol so we have lots of relatives there. We once spent a week there visiting these relatives that I only met for the first time. As the one in the family who likes to cook, I bought pancit bato when we returned to the capital. It's been more than five years since and I can't quite remember how I cooked it then. All I know is that my dad, who was quite skeptic when I bought it, was satisfied with it. Now excuse me while I try to get my hands on those noodles again.

@@featrmedia when my brother went to Bicol. It is one of his pasalubongs. I cooked it like the pansit habhab and it is good. I then watched a video on how it is supposed to be cooked the right way.
