I think there are different types. Here in Uganda we eat it fresh, boiled, fried, roasted, etc - no special processing

In Ecuador they make one of my favourite cassava (or yuca) snacks - pan de yuca

humans can tolerate a certain amount of toxins of various types (if slowly exposed) and even at high dosage if given enough time to acclimate by intaking smaller dosages that eventually increase to the target dose. of course there are limits and they still arent every high

here in california ive seen the starch and products usually labeled as tapioca and the ingredients of said products relating to the word tapioca whereas the whole root or some part of the root is usually sold as cassava

It's because cassava has been modified over the years. So basically there are different types of cassava, e.g in my country Nigeria, we have stems ( cassava) that called 2years( I have not seen this one, but mama said it was grown in her village in the early days), 1year 6months, 1year, 6 months, and the newest modification 3months ( and the worst) The other cassava stems (2 yrs, 1,6 months) are called old stem in my state but are hard to find, I think some of them are extinct like the 2yrs stem. And it (2 yrs ) could stay in ground for a very long time even after maturity and could even reseed itself. It also produced cassava mushroom ( I wasn't lucky enough to see that as no one grew them any more). I don't no what type of cassava they be planting but I no most of this is produced in factory so u shouldn't expect less. They enhanced production = Profit. Factors like variety of cassava and the fertilizer and any other enhancers ( pesticide, growth hormones etc) will affect the output aka quality.
