We are fortunate enough to raise many of our own meat animals on our small home farm in the Highlands of Scotland and are SO looking forward to using our own pork in your recipes for the first time. So funny using them as a rice boat! Any time we get Chinese takeaway I always fill the bowl shaped ones with rice, curry sauce, chips and chicken! (Normally a sliced chicken ball) and top it with a flat prawn cracker and eat it sandwich style! Been showing people for 20 years and they all still do it! Anyway thanks for all the videos picked up plenty of tips along the way!

Thanks for the video, I requested this one a little while ago. I had a funny feeling that most takeaways bought them in completely done already, but was also surprised to find out you can buy them at the half way point (made but ‘raw’)

I prefer the chinese version. Guess it's just what I grew up with so I'm used to those. I like to dip them in the sweet and sour sauce.

I'm glad I'm not the only one that puts rice in their prawn crackers, I also put dry house special chow mein in them and sometimes with a dash of soy sauce, sweet and sour or hoisin sauce the best way to eat them I think, I do prefer the thinner ones as they are not so filling as the others so I can eat twice as much 😂

When I'm feeling pekish later after a takeaway there's nothing better then a riceboat with some curry sauce 😋 As a side did you guys ever use wing yip in Croydon? massive chinese wholesalers, must go when I next go back their.

My self-taught technique is to use a small saucepan about half full of oil. I get it to around 200*c, and then add 2 crackers. When they rise, I push them down with the back of the spider until I feel resistance. Then pull them out and drain them in the spider, while adding two more to the oil. By the time I transfer the drained ones to the kitchen paper lined bowl, the others are starting to rise. I guess I've never had a burning issue, because I only do two at a time, and can easily control them. But if I do more at a time, I'll be sure to use the basket idea too! I got a big pack of the Vietnamese ones and a smaller pack of the thinner Chinese ones. Personally, I prefer the Vietnamese ones. The other thing I learned is to let them cool for a few minutes, so they o crunchy. If they're still hot, they can be a bit stale or chewy feeling.

Your vids have helped me to recreate the taste of take aways, the secret is they don't use anything fancy , Chow mein is literally just dark soy sauce and a pinch of MSG and nothing else. You need a wok burner too, an ordinary hob won't get that same taste.

Off topic but great little tip, if eating Vietnamese salads (mango/papaya/lotus stem etc) you can serve on the crackers 😊

You should of cooked the thin ones so we can compare the finished puffed up cracker. My local Chinese have the thick ones taste lush and keep for about 3 days in the bag

Our favourite Chinese has 2 - white and brown (sandy colour) Crackers, the latter being a tiny bit spicy. Any idea what they are? Do they simply have chili added to the mix?

A massive box of the small ones are like £3 in my local asian supermarket (not a dig at the web store, delivery must be massive on top of that). We're only halfway though it after a year of having crackers regularly. The bag must cost the local takeaway more than the crackers do per potion.

I kept meaning to ask you guys. I bought your book and like it. When I use potato starch it seems to congeal in to like jelly which is pretty gross. I've tried it a few times. I'm wondering if it makes a difference what brand potato starch I'm using? I've used corn starch to thicken things for years and years. I'd say I'm a half decent cook. Any ideas? Cheers

You need to be stiring as you add the potato starch, if you watch as we pour we are stirring the hot food, you just add it it will cook and turn into a blob

They call them Krupuk on the menu if you get takeaway in Germany. Took me ages to work out what they were. And over there they don't have the pronounced 'prawn' flavour and there's no way you'd get a free bag and a bottle of pop if you order over 20 quid/Euro.

@@ZiangsFoodWorkshop Yeah, quite a few Javanese/Indonesian people in and around Hamburg. Shame they have to tame their food to please the bland German palate though. Best place there was a combined Thai/Vietnamese cafe that did proper spicy food. Their papaya salad was like drinking the juice from the bottom of a Szechuan pepper jar.

Any chance of an easy bright red sticky BBQ sauce recipe? All the takeaways used to do bright red BBQ sauce that was stunning with chicken balls. However, most takeaways do do brown bbq sauce now and it’s nice but just isn’t as good as the red stuff we used to get.

@@ZiangsFoodWorkshop while I am asking maybe an idea for down the line when you’ve maybe covered most common take away dishes as it’s not a common dish in U.K. Was in a restaurant once and they offered me an off menu dish which was a restaurant-used version of Mouth Watering Chicken (their translation). They said it was usually a whole chicken back home but did it with a battered breast cut on the diagonal (like some places do for a special satay) with the mouthwatering chicken sauce which was dark bitter-ish very hot and hard to tell but almost a slight mandarin orange sweetness but so far haven’t found a recipe that looks right to make the sauce and thought maybe a chance you may know? One of best sauces I have tasted :)

Thanks for showing the spider "technique" to keep the chips submerged sometimes when I made the thick ones, they had some tougher ones than others, and I thought it was due to the thickness, because the thin ones always turned out right without using the spder. I wish you guys sold the colored ones. I prefer your take on chinese takeout dishes over the ones near where I live in eastern europe. Sometimes I deep fry those Korean(?) sweet potato/tapioca noodles for a similar "crunchy stuff" to throw under a meat dish on the plate. You guys should do an EU shipping "drop ship" type of shipping option for your store, I mean, if you were getting enough EU orders... there's stuff you guys would ship that I can't get even on A,mazon.

I know they do them all over the northeast.... shrimp crackers, shrimp "boats" sometimes they call them. "old style" American-cantonese restaurants dating from the 1950s will have them, and some places have fancy colored ones, nice pastel garnish.

You have to understand this is for beginners too and they like for things to be explained also I see lots of people ask how to make prawn crackers because like I said there are lots of beginners here who just don’t know but now they do thanks to this very helpful video. I suggest maybe you start your own channel if you know so much. Tell you what though this channel seems to be doing pretty bloody well with or without you so see ya 👋🏼
