Does Ramen have to be Japanese? Can it be German? What if we adapt Ramen recipes to local ingredients? Ryan from ‪@WayofRamen‬ joins me on a quest into a fascinating culinary world.

► Ramen Noodle Dough Recipe (per serving)
100g all purpose flour
2g gluten powder
2g baked baking soda
2g salt
38g water
► Asparagus stock
peels and trimmings from 500g white asparagus
1/2 cabbage, roughly shredded
500g asparagus, peeled
1 Tbsp clarified butter
► Shio Tare, Germanized
inspired by ‪@WayofRamen‬
use 7-10% tare to stock
450ml water
70g sea salt
25ml Riesling white wine
25ml soy sauce
10g sugar
2,5g msg
dashi seasoning / powder for 500ml water
► German Breadcrumb Chiyu
Chicken skin from 3 whole chicken legs
1 onion
4-6 garlic cloves
(the above is your chiyu, reserve some of it)
2 Tbsp Chiyu
1 Tbsp Butter
1/2 Tbsp breadcrumbs
► Kassler Chashu
500g pork neck
10-15g smoked salt
1/4 tsp black pepper
1-2 juniper berries
1/4 tsp garlic powder
1/4 tsp mustard seeds
1/4 cup mirin
1/2 bay leaf
1 Tbsp light soy sauce
1/2 Tbsp dark soy sauce
1/2 Tbsp liquid smoke

I'm Japanese. Love this video, nice try Andong! Want to try some! Personally, I appreciate original ramen like this, not imitation of Japanese one (mostly poor quality...). I feel Ramen is becoming a kind of "culture" even outside of Japan, thanks to its freedom-ness

@@ls200076 But it's true though the word ramen is a Japanese transcription of the Chinese lamian (拉麵). It was made in Chinatown in Japan. It's like burgers and hot dogs originate from Germany before being brought to America.

​@@chilliam00 I think so. Ramen used to be called Chinese Soba in Japan. So originally from China, transformed and bloomed in Japan as "Ramen", and expanded to world from Japan. Anyway, for most of Japanese, Ramen is comfort food, not like authentic or traditional artisan kind of things. Don't need to stick to certain form, just enjoy, like Andong did in this video!

I love this, and I love that you unearthed the reality of how Japanese people really seem to think of stuff like this. As far as I understand it, there is a high emphasis on self-discipline and personal excellence - sort of 'do _your_ very best', but it is too often interpreted by outsiders as some sort of rigid, prescriptive set of procedures. If we just slavishly copy someone else, we're not doing *our* best, and in reality, we're not even doing it as well as they are doing it. Your ramen dish looks fantastic!

There's a reason the suicide rate is so high in Japan. They have it instilled in them from the moment they're born that they have to be perfect yet are expected to constantly improve. Life isn't supposed to be about that. Tourists usually get to enjoy Japan more than actual Japanese people do, because Japanese people are nearly always working. I would hate to live like that.

Tip i learned from a chinese grandmother for making vegetable soups/stocks. Char the cabbage in the oven first before adding them to the soup/stock, really enhances the umami flavour

The only time I've ever had white Asparagus was in Germany. Way back in the day I was in Pfullendorf.... didn't speak or understand any German but looking at a menu I saw something that was cheese. (Fast forward it was Welsh Rarebit on toasted bread with white Asparagus). I had never seen white Asparagus before in my life, so I scraped it off and ate the cheese sauce bread. The German waiter insisted I at least try the white Asparagus. Not wanting to insult an entire country, or at least the chef...not only did I try it....I ate it all and immediately ordered another one! So I've had white Asparagus exactly 2 times in my entire life and it was great.

@@lemoeli7329 White asparagus is actually the same as the green one. Only once the plant starts growing the stem it is buried in an earthen kind of mound and thus kept from getting any sun and therefore unable to develop any chlorophyll. Being kept from sunlight also alters the flavor somewhat.

Since soy sauce essentially comes from fermented soy beans, I wonder if you could replace the soy sauce with an even more German flavoring by fermenting your own beans. Perhaps use something more local like field peas, or faba beans. Would your tare with faba sauce instead of soy sauce be just as good, or better even?

@@mynameisandong Hey Andong! Quick unrelated question: somebody bumped a year old comment of mine on your channel, and I noticed all of your old replies were missing. Were you getting swamped with notifications so much that you had to delete old posts? Also, good luck with the soy sauce. I've learned it can take quite some time to wait for the fermentation, like years even.

@@mynameisandong It's a good idea on paper but the Koji for fermenting soy sauce (and making miso btw) is rather hard to find and it takes months to ferment it. Not the easiest fermentation either. If you wanna add a fermented German dish (that's also easy to make), why not go with raw Sauerkraut?

@Michael Gia Huy Nguyen Kann ich mir gut vorstellen, ist ja beispielsweise in Szegediner Gulasch auch drin. Aber ich würde selbstgemachtes (rohes) Sauerkraut nehmen, nicht das abgepackte, gekochte aus dem Supermarkt. Rohes Sauerkraut gibt's auch fertig zu kaufen, z.B. bei Fairment, wahrscheinlich auch im gut sortierten Bio-Markt. Ich habe mein selbstgemachtes Sauerkraut mal zu Brotsuppe (einfach nur Zwiebeln, Knoblauch, altes Brot, Wasser, Käse, Salz und Pfeffer kochen und pürieren, war an ein Rezept aus dem 18 Jahrhundert von Townsends hier auf RU-vid angelehnt) gegeben, einfach beim Servieren eine kleine Handvoll in die Schüssel. War absolut köstlich, bringt eine angenehme Säure und Biss in die Suppe. Mit gekochtem Weinsauerkraut könnte ich mir das aber nicht vorstellen...

Genius. Absolutely brilliant. Your best video to date. Really enjoyed you eating it at the end - your joy was palpable. So inspired to do something like this using British ingredients - and how liberating to know I don't have to try to recreate so-called "traditional" Japanese ramen (whatever that is meant to be). Just remember, ramen itself was originally japanese interpretation of chinese lamian. The dish itself was originally even called chuuka soba ('chinese noodle') before turning into japanese pronunciation of lamian.

I saw the thumbnail and saw German Ramen, my 1st thought was the anime "Ms. Koizumi Loves Ramen Noodles". One this episodes featured a German food-inspired Ramen that a Ramen chef of German ancestry made. so I thought he was gonna make the German Ramen from the anime..

Thank you the new viewpoint on ramen. I've never been in Japan (but I want to go) and never eat "traditional" ramen but want to try sometimes and I thought I have to use japanese ingredients to cook it at home but now I can experiment with local stuffs and make a hungarian version of ramen. :D Oh and I forgot the "kneading bag". I have to get one!! :D

Great video! We have been talking about German ramen in the Way of Ramen Discord Channel and were thinking about substituting bamboo shoots menma with asparagus, adding Kassler as substitute for pork chashu. You could also add cured backfat to make it even richer. actually chewy noodles are made with higher hydration as the more water you add the more gluten can develop. as for lower hydration they tend to be firmer and snappy.

The natural Yellow color used in Japan is NOT ‘Jasmine pods’, they are GARDENIA PODS. In Japanese they are “kuchi nashi”クチナシ.

The Way of Ramen is awesome, i've learned a lot about making ramen at home from his channel and thanks to that it's one more thing I've cooked down during The Great Lockdown of 2020. I'm still pretty bad at it but just getting the noodles right felt like big first step for this amateur cook.

the ingredients are variable. the approach is tradition. flavor from the tare, mouthfeel from the broth, aroma and aura from the aroma oil, nice good noodles. all prepared separately, all assembled on the bowl right before serving.

Tochi Ramen (currently located in West Bend, WI and formerly located in Shorewood, WI) had a bowl of ramen similar to this at their old Shorewood location. Being located in metro Milwaukee, which has the highest concentration of people of German ancestry among large cities in the US, they had a "Wisconsin Ramen" that was inspired by "local" (popularized by german immigrants) ingredients. The ramen had butterflied charred bratwurst, beer sauteed onions, sauerkraut and noodles in a mustard flavored broth IIRC. It was absolutely delicious and I would often order two bowls because it was so good. Unfortunately the wisconsin ramen is no longer available in their new west bend location but they have miso, shoyu and a mazeman beef ramen that will make you order two bowls.

The tri-colored noodles look fantastic and the idea to Germanize a bowl of ramen is unique. Can’t wait to give it a try. As always I have to veganize the recipe but since the star of the show is asparagus anyway that should be easy this time. Stay healthy!

No problem! Just skip the meat and use vegan dashi. Not sure what the best vegan oil is. But Ragusea says you can use olive oil, so why not!

I've got a similar idea about ramen not being a recipe but a way of live when I red the book of Ivan Orkin. I've got to try this Spargel/Schmalz/Kassler out. Never tried to be that regional :)

Try a Russian or a Karelian ramen next? After the whole lockdown thing is over, so you can use local ingredients. Finland is pretty close by too ;)

I'm surprised you just now thought about using local ingredients in foreign food. As especially seen with Chifa, using local stuff to cook is a staple of chinese emigrants kitchen ;)

Mjoa, dünn geschnitten, knusprig gebraten und richtig gewürzt sollten die funzen. Ansonsten sind Aziagurken sicherlich ein guter lokaler Ersatz für japanischen eingelegten Rettich.

Your videos are crystalizing what I've been thinking about learning new dishes lately. I want to know the "soul" of a dish, the gestalt, so I know what purpose the ingredients serve and I can make it with what's available to me and the particular stocks, veggies, spices, etc. that I personally like.

Edit: I made, "German" Ramen myself as well... but i took Salami and Onions, since i didn't had much at my home. So yeah. Made some kind of Onion soup, but i bround my Salami a tiny bit, and than glassed my onions untill i went HAM and just went so spontaniously crazy that i can't remember how i did it. Boom Soup, Noodles, Salami DONE

if you base it on Zen Buddhism, yes, it is still Ramen. Like Madonna’s Geisha Reinvention that was an Authentic expression of the spirit of the Geisha image and culture. Because it was true to the principles of the original art.

Pro tip for tare: Mushrooms are very high in umami content. When I made tonkotsu, since I couldn't find dried sardines, I swapped them out for shiitake mushrooms. Try using some local mushroom favorites next time! ^~^
