🧑🍳Cooking tips:
❗These vegetable wraps can be frozen for up to 3 months.
❗You can modify the filling up to your taste and ingredients preference. I share with you new recipe ideas.
❗You can substitute corfu for dairy free ricotta or soft cheese.
🥣Method and ingredients:
Dice 1 onion.
Sauté diced onion until translucent for about 3-4 minutes.
Grate 1 eggplant.
Transfer grated eggplant to a frying pan and cook for about 10 minutes stirring occasionally.
Mash 300g | 11oz firm tofu and 120ml | 1/2 cup dairy free yogurt until the “curds” are as small as you like.
Pour 1tbsp lemon juice and add salt to taste. Set aside.
Chop 2 garlic cloves and transfer to a pan.
Add salt and black pepper to taste.
Chop parsley, add to the pan and mix well.
Add eggplant mixture to the mashed tofu. Mix until combine.
Brush filo sheet with olive oil.
Spoon about 1/2 cup of the filling onto sheet, fold on the sides and roll the filo sheet up.
Heat a little oil in a pan and fry the wraps from both sides for a few minutes until golden brown and crispy.
Enjoy delicious veg wraps with eggplant and tofu! 💕 They are so crispy on the outside and super tender and delicious inside!
