It’s so delicious that I make it every weekend! The tastiest vegan eggplant recipe! ASMR cooking. Learn the new recipe with the eggplant and tofu! Simple and easy veg wrap recipe everyone can make at home! This veggie wrap is so crispy on the outside and the most tender on the inside! They melt in your mouth! 🧑‍🍳Cooking tips:
❗These vegetable wraps can be frozen for up to 3 months.
❗You can modify the filling up to your taste and ingredients preference. I share with you new recipe ideas.
❗You can substitute corfu for dairy free ricotta or soft cheese.
🥣Method and ingredients:
Dice 1 onion.
Sauté diced onion until translucent for about 3-4 minutes.
Grate 1 eggplant.
Transfer grated eggplant to a frying pan and cook for about 10 minutes stirring occasionally.
Mash 300g | 11oz firm tofu and 120ml | 1/2 cup dairy free yogurt until the “curds” are as small as you like.
Pour 1tbsp lemon juice and add salt to taste. Set aside.
Chop 2 garlic cloves and transfer to a pan.
Add salt and black pepper to taste.
Chop parsley, add to the pan and mix well.
Add eggplant mixture to the mashed tofu. Mix until combine.
Brush filo sheet with olive oil.
Spoon about 1/2 cup of the filling onto sheet, fold on the sides and roll the filo sheet up.
Heat a little oil in a pan and fry the wraps from both sides for a few minutes until golden brown and crispy.
Enjoy delicious veg wraps with eggplant and tofu! 💕 They are so crispy on the outside and super tender and delicious inside!

Pro tip: If youre using Onions or garlic let the cut pieces rest for ~10 min so the Allicin can devolp its anti-inflammatory potential. Add a little bit of chievs to ensure that the Allicin doesnt "get lost" while roasting it.

Looks delicious but what is the white ingredient you mix with the eggplant mixture. Is the wrapping the same that you use for spring rolls?

Hello! 👋 The ingredient I mix with the eggplant is tofu (it's mentioned in video itself, in subtitles and in the video description as well). The wrapping is different to the one you use for the spring rolls. The one for the spring rolls is made from a paste of rice flour and water. The one I use is filo or phyllo and this is a very thin unleavened dough used for making pastries such as baklava and börek in Middle Eastern and Balkan cuisines. Filo pastry is made from an unleavened dough (meaning there's no rising agent) of vegetable oil, a dash of salt and warm water added to plain flour that's then kneaded and stretched by hand until it's thin enough to see through. Hello Maria! Thank you for your comment and visiting my channel! Traditionally, filo/phyllo dough is made from wheat flour, water and a small amount of oil or melted butter. I buy filo/phyllo dough pastry sheets here in UK as it's widely available in most of the stores. If you do not have it available where you live you can use spring roll wrappers (they should be also available in stores). Alternatively you can make your own homemade phyllo/filo dough. However, this can be time consuming. The main ingredients you will need to make your own phyllo dough include: Flour Water Vinegar Oil Salt These are ingredients you most likely already have in your home. This can be a great substitute for store phyllo dough because you are making it yourself, and you can continue to make it once you learn. You first want to gather your ingredients Next, you want to mix the ingredients until the dough comes together Then, you want to knead the dough until it is smooth You want to make a ball of the dough to place at room temperature for around one to two hours You then want to divide this dough and roll into smaller balls You want to use a cornstarch mix to layer the dough You then want to roll the stack into a large circle You want to repeat this process using all of the dough You can find homemade phyllo dough recipes online Have a nice weekend! 😊 💖

What about cooking the tofu before adding to eggplant mixture. Or does it cook enough when frying in the filo dough ?

Hello! Thank you for your comment! When you add yogurt and lemon juice to tofu you get vegan "cottage cheese", tofu in this recipe does not need to be pre-cooked. If you cook tofu first you will get a different result.

El filo o filo es una masa sin levadura muy fina que se utiliza para hacer pasteles como el baklava y el börek en la cocina de Oriente Medio y los Balcanes. La pasta filo se elabora superponiendo muchas láminas de filo untadas con aceite o mantequilla; Luego se hornea la masa. Puedes hacer tu propio filo aunque lleva tiempo. Normalmente lo compro en la tienda de alimentación (vivo en Inglaterra y aquí está muy disponible). Como embrulho, uso folhas de filo (Filo ou phyllo é uma massa sem fermento muito fina usada para fazer doces como baklava e börek nas culinárias do Oriente Médio e dos Bálcãs). Hello Agnes! Thank you for your comment. Yes, you can add vegan Feta, it will be even better with Feta, very good idea! I prefer not to pre-heat tofu as by adding yogurt and lemon juice to tofu you get vegan "cottage cheese" and it does not need to be pre-cooked ot pre-heated. Have a nice day! 😊💖

Hello Curtis! Thank you for your question! If tofu is vacuumed packed or firm already, you definitely don't need to press it. Here's why: moisture in tofu is a good thing. Tofu is over 80% water, and that moisture is what makes it such a succulent, juicy source of protein. Pressing it can make the tofu unnecessarily dry and strip it of its intended texture. I have not pressed the tofu as I had firm tofu for this recipe. Hope you enjoy!
