🧑🍳Cooking tips:
❗You can modify the filling up to your taste and ingredients preference.
❗You can substitute cashew ricotta cheese (click the link and see the recipe on my channel )
for tofu, soft cheese or feta.
🥣 Ingredients:
1 eggplant 🍆
1tbsp soy sauce
1tbsp oil
1tbsp water
1/4tsp mixed spice
150g | 1 cup all purpose flour
40g | 1/4 cup semolina
1/2tbsp baking powder
pinch of salt
100ml | 4fl oz hot water
1tsp oil
150g | 1/2 cup cashew ricotta cheese ( click the link and see the recipe on my channel • This is the MOST DELIC... )
30g | 1oz cilantro
1 tomato
chopped walnuts
🥣Method:
Peel and slice 1 eggplant into 0.3inch | 8mm thick slices.
Arrange on a baking sheet.
To a small mixing bowl, add 1tbsp soy sauce, 1tbsp oil and 1tbsp water.
Season with 1/4tsp mixed spice and mix until combine.
Brush eggplant slices with the sauce.
Roast in the preheated oven 390F | 200C for 20 minutes or until golden and soft.
Combine and mix 150g | 1 cup all purpose flour, 40g | 1/4 cup semolina, 1/2tbsp baking powder and pinch of salt.
Pour 4fl oz | 100ml hot water and 1tsp oil.
Knead the dough.
Cover with a towel and set aside for 10 minutes.
Divide the dough into 3 equally sized pieces | 80g each.
Roll out into a circle (1/4inch | 0.6 cm thick).
Use 150g | 1/2 cup cashew vegan ricotta cheese ( click the link and see the recipe on my channel • This is the MOST DELIC... )
Chop 30g | 1oz cilantro and mix into vegan ricotta.
Spoon some of the filling and spread over the dough.
Add roasted eggplant slices.
Chopp 1 tomato.
Season with 1/2tsp ground coriander and salt. Mix well.
Seal the edges.
Bake in the preheated oven 480F | 250C for 10 minutes.
Brush with oil (add herbs of your choice like cilantro, parsley, thyme etc.).
Enjoy these delicious vegan recipe with eggplant and cashew ricotta cheese!
