Yes, please. We used to go mushroom hunting in the spring. I wouldn't bury morels under Cream sauce. I'd coat with flour, fry in some butter with a bit of salt and pepper, that's all you need to do.
I love mushrooms. When it's mushroom season in Poland, everyone goes to the forest and picks them. We have dozens of recipes for dishes with mushrooms.
I always hated them until I learned how to cook them properly. Picking them is quite a popular thing throughout most of Eastern Europe. I wish I could trust myself enough to not accidentally poison myself 😂

@@vincenzosplate i was going to mention this, but granted nick didn't use the whites, so prob even half of that, 5 kilo would be too much, so i guess nick has correct measurements of just using double the weight of eggs to weight of flour

Yeah for 1 whole egg it’s 100g flour which is average 50-60% egg to flour, but he’s using the yolks so it weighs less than a whole egg so you’d be more 2 egg yolks for 100g flour, so if he’s got 1.8kg of eggs yolks then he’s doubled the amount of flour.

what do you use egg whites for when you make a carbonara? I don't know what to do with it is there anything quick I can make with just egg whites and maybe 1 or 2 other ingredients that I can pair with a carbonara?

Vincenzo- first you said it was enough for 10 kg of flour (i guess actually 5 because it’s missing the egg white) and then you said 3.5 kg of flour was too much. I don’t think it was, but I do think he used a machine to bring it all together.
Ohh was I nervous watching him make that volcano and pour all those eggs in. I remember the first couple times I made pasta, 200 grams flour, 2 eggs-what a mess I made....the well broke and it went all over the counter and dripped on the floor.

Bro, an egg weighs about 50 grams (could be more or less), and you are saying that the correct ratio is 1 egg per 100 g of flour. This means that, by weight, the ratio is 50g of egg per 100 grams of flower. So Nick is using the correct ratio: 1 part egg for 2 parts flour (by weight).

lots of people don't know how to do mushrooms, plenty of parents boil giant chunks of mushrooms or fry giant mushroom chunks for not very long and serve undercooked squishy blobs that taste like dirt. what's worse is when they do this for a dish with chicken the childhood trauma I have of eating a curry or some dish wish cut up chicken, finding the most perfect piece of what I assume to be tender white meat, then biting into it and to my horror feels squishy flavourless undercooked mushroom now I know how to do them properly, pan fry in olive oil, basil and other herbs for a long time. usually I like to cut them up into thin strips so they are a little diluted cause I still don't like the feeling of chewing a big piece of mushroom

This recipe seems like such a waste of ingredients and time. Not using the egg whites, covering up the truffles with other mushrooms, all the unnecessary cream, cooking the truffles and destroying the flavours, and all those pans used. A classic Alfredo with the truffle butter and/or some truffles stirred though/shaved over at the end would have been better.
Yes, you are right! There are far better recipes out there for you to try on, I won't recommend this recipe to you, it's a waste of resources, eggs nowadays are so expensive.

@@farqilion8747 egg white has about 65% of the liquid then yolk ig about 1.5kg are needed for that quantity ig he just bluffed that it it's 10kg and for normal about 35-40grams needed to make a perfect pasta dough this is the reason why many masterchefs use 2 yolks than 1 full egg
