BACCALA SALAD:
1 large boneless Baccala (cooked) - Dried Salted Cod
1 cup Spanish Olives
1/4 cup chopped Fresh Parsley
2 cloves chopped Garlic
1 large head Cauliflower (cooked)
1/3 cup Extra Virgin Olive Oil
2 sliced Oranges (Navel or Blood)
Salt and Pepper to Taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

I love baccala! My Nona used to make it twice a year at Christmas and Easter. The smell of baccala lets you know when you are in a real Italian grocery store. It's delicious! God Bless you Nona Gina XO

I look forward to her videos. We lived in Vicenza, Italy for a few years while my husband was in the military. I learned to make a few things from a grandma that I met through church there. She did not speak English and I did not speak Italian but we had so much fun. I kept my little Italian dictionary with me if I was completely stumped as to what she was telling me. She to did not use recipes, she just cooked. I would stop her to measure what she was putting in recipes sometimes. These videos remind me of her and the good times we had in Italy.

Ahh Vicenza.....I always wanted to be stationed there. There was a Brigade of the 82nd Airborne there and I was at Fort Bragg, NC. I even tried reenlisting for that assignment but they were full. I guess that was a primo spot!

My mom made baccala for Christmas. But all she added to the baccala was garlic, fresh parsley, and olive oil. It was that simple. This year I’m making it but I’ve bookmarked this video as a reference

Ciao! I enjoyed watching you prepare bacalao. You reminded me of my mother making bacalao for my father who loved it. I remember being a little boy going to Italian delicatessens in San Francisco and wonderful smell of the salted cod hanging above the cold meats cooler. Later, as young man I had Portuguese friend whose family came from Madeira (my parents came to SF from Malta), and his mother taught me how to make a Portuguese bacalao salad. I still make bacalao from time to time as a way of being with my father and mother and my Portuguese friends-all passed away now. When I make it I am with them in love and in spirit. Thanks!

My Mom used to make "Ensalada de Bacalao" that is very similar to this one. Two differences, instead of cauliflower and oranges, she used avocado and fresh tomatoes. Dish from Spain. Thank you for sharing your wonderful recipes with us! :)

Hello, I have been enjoying watching this channel it so much reminds me of how my Mum was. It's funny that even in my time back in Malta in the 60's Baccala was a poor mans food and cheap. Today to buy it in Australia you have to go to a specialty store and pay an arm and a leg :)

This is because it's overfished and nou the result is that it's more expensive and harder to find. Cod fish was the most eaten food during the Middle Age by catholics during lente. Those time, The Hanseatic Ligue (Scandinavia and Hamburg) was dominating the trade, they made fortunes. Nowadays, tuna, sworrd fish, somon, cod it's in grand demand. The traditional fish and chips is a traditional dish in UK and it' cod etc. The fish can't be farmed as saumon, therefore the result.

Reporting in that I made your baccala salad! I only made a small batch, but it’s another delicious success. I did a mix of black and green olives. I was a little nervous about the combination of ingredients but it was so refreshing. The orange really made it tasty! Will be making your tiramisu again for Christmas 🎄

Hi Gina, looks wonderful. My mother in law made this every Xmas eve just a little different from yours. She used capers, black olives, and vinegar peppers. That’s what she called them. Oh and celery too. So funny how everyone makes these dishes so differently. Haven’t had baccalla salad in a long time but you’ve inspired me to make it! Keep the videos coming. wow what a nice version of baccala' salad- i can see how much the oranges compliment a dish like this. i would love to try her zuppa di baccala with the raisins and the figs. she is fantastic.i would love to here how she makes tripe and pasta e fasule. i love the first few episodes when she spoke in her dialect, i understood every word. very similar to our dialect of pietrelcina benevento.

this is lovely, Gina. But can I ask U what part of Italy is this dish from??? We have always done it different !!! but this looks great also :) thank U 4 the video...I much enjoyed it :) but one thing we do agree with, soak it for 3 days changing the water 2 or even 3 times a day. Gotta change the water & soak for days !!!!

This is quite interesting. My grandparents from Southern Italia (Cosenza Area (San Pietro in Guarano)) made Baccala / Baccali salad every Christmas eve. Maybe it was the poor Italians version as it really on contained the cod and Parsley (plus the dressing). LOL. there must be a dozen different recipes for this salad. Basically as long as it contains salted cod and parsley it is original in some respect. Other stuff is just what you want to add maybe? Although I do see most versions with olives. My grandparents never had olives in it. Maybe didn't like olives?

The salt doesn't seem to affect Gina's health at all. It's seems like so much to me, though, because I measure out 1/2 tsp for a whole recipe. I grew up with a salt shaker next to my plate, though. I think most of Gina's dishes would be shockingly salty to me. But good for her, if that's her way to use salt.

@@TheLissabee this recipe (insalata di rinforzo) is typical from Naples and in general the south of Italy, we use to eat this during xmas period .

@@affa3868 this is not the inzalata 'e rinforza they eat in naples,which doesnt contain baccala it contains cauliflower but with alici and vinegar peppers plus in naples they use gaeta olives. this is a typical recipe of the hill towns of the daunia in the province of foggia a mountanous area which confines with the benevento prov. this is extremely unique. the use of the organge is ingenious in contrast with the other salty ingredients.

I have only used cauliflower, maybe you can try broccoli... my son in law cant eat cauliflower either , but loves the salad so he just eats everything but the cauliflower

I never use salt cod, I always use fresh. The taste is the same you just don't have to go through the three day routine of removing the salt. Cod is my favorite fish. Such a hearty flavor. I will make this salad one day!

Lawrence she left it in water for 3 days and changed the water several times to draw out most of the salt.

I wonder if I could use just frozen cod if I would get the same result ?? I would follow the same recipe but with frozen cod ??

Unfortunately fresh cod would not work. The fish would all fall apart. The salted cod totally changes the texture of the fish and makes it stay firm. Look for Italian Specialty Shops or sometimes a supermarket will carry the baccala. Good luck and I hope you try it!
