Ok so I'm in America, and being an Italian who has eaten the best pizza Italy can offer I decided to try this famous New York pizza in Manhattan to see how it compares to the original Italian traditional pizza. I of course went to Lombardi's which is the most famous historical pizzeria in NY.

As an American who has never had Italian pizza, I'm not speaking from experience but I think in general Americans prefer more seasoning in the sauce and at least a little crispiness on the crust or at least on the surface of the crust even if it's softer inside. I find sweeter tomato sauce a little off putting. I'm not complaining about your preferences and I don't even know if this is how I'd feel about real Italian pizza but this might be a matter of cultural preference.

New York pizza is based on it being a street food. Chicago style is a little thicker but softer dough, but if you get a Chicago deep dish that's another matter. "Deep dish" comes in two varieties, pan pizza and stuffed pizza... pan is mostly dough, stuffed is mostly cheese and other ingredients. Pan can be eaten by hand, stuffed is more inclined to be cut with a knife and fork if only because it's just so massive. I come from Chicago and appreciate all the styles because of their diversity. Personally I prefer just a standard pizza from Chicago and occasionally stuff style. But a standard crust Chicago pizza isn't as thin as NYC style, Chicago in that regard is closer to Naples, specifically the crust. The most expensive ingredient in a pizza is the cheese, so they sometimes try to skimp on that, and in the US buffalo mozzarella on a pizza would be viewed as gourmet if you can find it at all.

If you go to the UK, there’s a franchise recently popped up called MOD. The base is rooted in the California style thin crust, so the place has an atmosphere like California with pop punk and rock tunes playing in the background, maybe the occasional ska tune. It’s fantastic, but at £11.95 per large crust, it’s a little pricey.

Naples' pizza was born as a street food/poor man's food as well. That's why Metatron also mentions the "wallet" thing. Besides, there are many places in Naples that will sell smaller pizzas you can fold and eat while walking around. Alternatively, there's also this thing called "Roman style Pizza" whichi is somewhat similar to american taste. It has a crunchy texture and is quite a bit thicker, and they are usually sold in slices (or "tranci", as we call them here in Italy). This pizza is tasty as well but I think it should be considered its own thing, given the differences in preparation and way of eating it.

Had pizza at Lombardi 1892 in Napoli (Via Foria 12/14) last october. We were fortunate our b&b was just around the corner of Lombardi's. I've forgotten the name of the one I had, but it was just tomato sauce, diced bacon (lardons), buffalo mozzarella and some leaves of fresh basil, served on the typical soft pizza dough... it simply was pure pizza HEAVEN ! ! ! (as Italy is basically food heaven in general, I would say) Best pizza I have ever had, it reigned supreme... even over some other very good pizza's I've had in other parts of Italy.

To answer your question on the sauce traditionally, New York and American pizza sauce in general is made with roasted garlic, dried oregano, and red pepper flakes. There are other things that can be added but these are the basics.

This was an interesting point of view man! I know in Philipsburg, Pennsylvania there is an Italian restaurant called Sarina's Pizza & Restaurant. It is family owned by people who I know come from somewhere in Italy but I forget what area they said. But it's interesting still the difference because even though they are an Italian pizza restaurant, it is still very much aimed to an American taste; crunchy crusts (not all the time but not like you describe in Italy), drier mozzarella (honestly, I've never seen a wet version here but, I've never looked either). If I find myself over in Italy sometime, which hopefully I will someday, I will definitely be trying some slices! Awesome vids man!

Metatron, I'm glad you're enjoying your stay. As a guy who likes making his own pizza, I enjoy making Chicago deep dish pizza most. As for the spices and herbs you're tasting in the sauce, in all likelihood it's a combination of oregano, garlic, basil, fennel seeds, and red pepper flakes with sugar and dry red wine cooked with crushed plumb tomatoes. Or some similar combination. That being said, I'm going to have to try my hand at a Naples style pizza with buffalo mozzarella.

I've spent a lot of time in Sicily and also the Naples area over the years and can honestly say I've never had a bad meal, pastry, coffee or wine (even table wine). The ingredients used are so much fresher and the expectation of the food and drinks to be of high quality is just a given. You could stop for fuel on the highway and in the small shop get a cappuccino and pastry and it will be very delicious. Service can be hit or miss for sure BUT the staff is always very friendly...they just may not be in any hurry. TLDR, never had a bad meal in italy.

There is an Italian owned pizzaria in our nearest city. It did have a softer crust by I've never been to Italy to compare. The owners however were yelling at each other in Italian and one cook left out of disgust and anger. They have an open kitchen so everyone could hear and see this and pretty much were entertained by it. In that regards, it did seem like an authentic Italian experience. ;)
