Hello Jabaar bhai, I’m also a chef and I have a Indian restaurant in USA. I have tried your biryani many times, it always comes too good. Thank you. I just wanted to tell A small tip for your onion Raita, after you slice the onions for Raita, pls soak the sliced onions in water with salt for about 5 minutes and wash it, then strain the onions and the add yogurt. The raw smell of the onion will go away while you washing it with salt. So it stays for longer time and tastes very good. Just try a small batch and see it. Thanks.

Jabbar bai .. If you treat your kitchen staff as partners and treat them good with nice accommodations, good health , reasonable vacation and good profit sharing. You will go places.
