Ingredients:
Jackfruit Pulp: 2 cups (ripe and deseeded)
Rice Flour: 1 cup
Jaggery: 1 cup (grated)
Coconut: 1 cup (grated)
Salt: As per taste
Teak Leaves (Tekkki Ele): As needed for wrapping
Instructions:
Prepare the Leaves:
Clean the teak leaves thoroughly and wipe them dry.
If the leaves are stiff, briefly heat them over a flame to make them pliable.
Make the Batter:
In a large bowl, mix the jackfruit pulp and grated jaggery. Ensure the jaggery dissolves well in the pulp.
Add grated coconut, rice flour and a pinch of salt to the mixture.
Mix everything thoroughly to form a smooth batter.
Steam the Wraps:
Place the wrapped batter in a steamer. Ensure the wraps are arranged in a single layer without overlapping.
Steam for about 30-45 minutes or until the batter is cooked through and firm to the touch.
Serve:
Remove the wraps from the steamer and allow them to cool slightly.
Unwrap the teak leaves and serve the delicious Halasina Hannina Gatti.
Tips:
The batter consistency should be thick enough to hold its shape when wrapped.
If teak leaves are not available, banana leaves can be used as a substitute.
