My guess is it's the best they could find in Hawaii? Finally, Klinger's wife said in M*A*S*H (later actress went to Deep Space Nine) that a white wedding dress was bad luck; they wear white for a funeral. Doesn't matter: audience is American, they won't know or care.
It's been somewhat long, but FYI the most correct subtitle will be - As the meaning of you and I being together for the rest of our lives, I carved on our wedding ring "Hope to be together forever." BTW the original subtitle here is much more touching...

It’s interesting how couples like Sun & Jin and Rose & Bernard have their resilience tested throughout the show. Rose & Bernard are separated physically by the plane crash for the first two seasons, as are Sun & Jin separated in later seasons by space AND time. But more so, they’re tested from within (Rose’s terminal diagnosis, Sun’s infidelity and Jin’s resulting coldness). I wonder if Jacob was watching both Sun & Jon from birth, knowing true love would bring them together one day.
