You can also save it for clam chowder. Fresh/homemade always beats canned clam chowder for me!

Jacques Pépin is my all-time favorite chef. I would give anything to be invited into his kitchen, cook alongside him, then sit down to whatever meal we made together, & listen to him talk about his fascinating life as a chef.

It's always interesting to watch a French chef take on an American dish like clam fritters. FYI, Escoffier has a recipe for fried chicken that's out of this world.

I love that he samples the raw mixture without even batting an eye and is going to use the raw juice mixed with vodka in a drink.... Cast iron balls!!!!

I used to catch clams using my feet when I was a kid in Newport Beach, CA. My sister and I could catch enough clams for a large batch of chowder in 30 minutes.

For anybody that can't open the clams good.. pop them in the freezer the open by themselves and you just dump the whole clam and the juice and the bowl and let it thaw for a few

This looks really good! But I’m very intrigued by the clam juice and vodka cocktail!!!!! I wonder haw calm juice would be in a Bloody Mary? 👍🤣👍

It’s delicious,try making your next Bloody Mary with Clamato, lemon, celery salt and just a couple drops of Worcestershire. Freaking delicious!

Clam juice is essential in a Bloody Mary IMHO. You could buy Clamato, but clam juice the way JP decants it here is ideal.

I would never presume to tell the master what to do, but a little trick to open the big clams is stick em in a 350 degree oven for 3 minutes to kill them. they open, but aren't cooked. much easierr

Looks good I guess in a pinch you could use already shelled clams since your going to process them anyway…

Yup. I always have canned clams at home. They're great for linguine or a quick cioppino.

I thought the same thing. Since they were freshed caught, I would have mixed the ingredients using the processor and added roughly chopped clams to the batter before frying...have some bite-sized pieces of clam in each fritter. But I love watching him cook and I learn something new every time
