We need to remember that our ancestors, regardless of where we are from had to process and store foods to survive, and they didn’t have hygienicl food handling then. Yet here we are descended from those people! We are spoiled and need to respect the very hard work it took to grow and process all that!

I remember when I was about 8 years old, in our village when they used to make gur this way, and children would be offered hot toffee wrapped on a sugarcane stick from the pan. It tasted absolutely amazing!

this machine is the same in every place of the world . In the streets of Brazil they have the same machine and make the juice this way. There is nothing to worry about. Even the picky people don't complain about this.The oil on the gears doenst enter in contact with the sugarcane , only the part that crush the bagasse is made of stainless steel.
a maquina de moer a cana é o menor dos problemas ai. a "garapa" nesse caso dá até pra encarar, mas a "rapadura", caso n esteja acostumado, seu sistema imunologico entrará em colapso. depois da fervura, a exposição ao local sujo, manipulação e o cara em cima pra embalar, sem comentários.... aqui no Brasil por incrivel que pareça, temos um controle de inspeção alimentar muito rigoroso, com um percentual de sucesso bem alto na fiscalização, e na própria concientização das pessoas.

On seeing this amazing art I recollect my memory, during annual leave visiting this, we call this 'aalaikoodam' (in tamilnadu, trichy) where two bulls do the job of crushing and other activities similar as above.. We use to get pots of juice and jaggery cooked at different stage, mix cut coconut pieces and enjoy.... Marvelous job. Those days not taxed but being a big industry now taxed and priced as per current days.(it was priced at 12 annas(..75paise per 1.4 kg., that was basic unit before decimal system).....sweet memories....
We make sugar in South Louisiana. The method is a bit more modern the sugar cane is ground several times in a mill with about 3 rollers the juice is diverted to tanks where it boils until it crystallizes. Then the syrup that will not crystallize is taken off and boiled some more . Some becomes molasses some syrup the sugar is then centrifugaled and washed produce ing white sugar the wast water is then boiled again.
