Jamaican Rice And Peas Recipe Beginners Friendly

Ingredients:
1 cup dried red kidney beans (5 cups water to soak peas with 5 cloves garlic). **Additional 2 1/2 cups water to cook peas. Make sure to rinse the peas before soaking to remove any dirt or bad peas.
4 cups long grain parboiled rice
2 cups coconut milk
1 tsp salt
All purpose seasoning (Seasoned to your liking)
4 stalks scallion
1/2 white onion
2 scotch bonnet pepper
Few sprigs thyme
3 small piece of ginger (can use whole or grated)
1/2 tsp all spice or a few pimento seeds
1 tsp cane sugar (optional).

I add a dab of sugar to most of my food to even the salt taste. In culinary school my chef thought I was crazy. I guess it's a black thing. By the way great video!

Thank you! It does balance out the salt taste and vice vera a little salt balance out the sugar.

I just used your old recipe video to make these on Saturday!! My mom loved it too the first time I made it. I don’t have a lot of pots on campus, so I didn’t cook my rice long enough in my instant pot on the low heat-saute function. I also used regular white rice so that probably changed the cooking time. I needed to add some more water and keep cooking. Just finished my plate of peas and rice with pinto beans and steamed kale and corn on the cob.🤗😋

My grandmother taught me to cook and she always added a little brown sugar to her peas. So I do also. But your receipe is easy to follow. It looks good.

I add a little sugar as well. I imagine the scotch bonnet pepper gives a good flavor (I have only used bell peppers in mine). I wish I could find seeds to plant my own, because I would love to try it. Even though I know they are really spicy lol.

@Nadia Dear Thank you so much! Really? Actually I was told I used to do the same thing when I was a child 🤷🏽‍♀️. Do you eat the peas outside of rice and peas like stew peas?

Trust me I know the struggle of not being able to find scotch bonnet pepper. Even now I have to poke it a bit to smell if it’s scotch bonnet especially if I more so need it for flavor than spice. I do hope you find some soon. You might have to check at a farmers market in you area if the supermarkets don’t sell it. Thank you so much. I’m sure you enjoy the recipe regardless.

@@AuthenticPlantbasedEats how do you know the difference? Yesterday I met this Rasta Man at the West Indian store and I asked him to tell me the difference but there was no Scotch Bonnet Pepper at the store and he couldn't really explain it to me. I just have to get some when I go back to yard🇯🇲🇯🇲

Honestly If you’re familiar with the smell it immediately click. Most times I I ended up buying a bag and half is scotch bonnet and half is habanero. They look similar and apparently they are cousins and unless you pierce them and smell or cook with them you can’t really tell them apart. I need to plant the tree. I’m with you on that I can’t wait to go back home and get an abundance of the real deal with no confusion.

Hi, thanks for the lovely recipe, i must say "the finished pot of rice" looked great... One thing however, you mentioned adding water that should be 2 inches above the rice, but surely that's too much water? & yours didn't appear to be "2 inches" above the rice & it came out perfect. I think 2 inches "above the rice level" will be way too much water & will cause the rice to become mushy, which nobody wants!

My mum would flip over the peas by shaking the pot after the water level has gone down before adding more water. Is this necessary ?

Not necessary, but its ok to stir them at that point then add the water to sink them.

That's my peeve! Adding sugar to rice and peas. Should have asked why the sugar was added. All you need is a "bone" dry coconut or native coconut. That gives your rice and peas a sweet taste. No sugar!

I rinse the peas to remove any dirt or bad peas then added fresh water to soak them. I used the same water that the peas were soaked. No need to discard that unless you have issues digesting peas/ beans.
