My hubby had never even heard of jambalaya before we met 23 years ago. It took about a year to school him on how to make it properly but since then I would stack his version up against anybody else's! He uses shrimp, chicken, and andouille sausage!! It's sooooooo good and the perfect compliment to a cold beer and some cornbread! Darn, now I'm hungry!
Now I've watched a couple of my neighbors to the south of south arkansas but i think ive found the cook that i feel is on point, no added props just straight cooking.

That smoked sausage looks quite similiar to what is the Swiss national sausage. You are using plenty of it. Cooking over wood fire is just fantastic. It provides a unique taste to the food and it's just the most natural way of cooking. I absolutely love it. By the way. Did't know you would use Worchester Sauce, but i always used it for Jambalaya. It was like intuitive.
I don't think the wood fire gives it any specific flavor because it's in a pot he's not smoking it dude... and he didn't use any Worcestershire sauce, he used Want-your-sister-sauce just listen again🤣

His cooking is about heat management, and those handles he uses are so unique. I made the MF'r cornbread and it is to die for. I think I want to try his Cajun seasonig for sure.
